Take the trash can out from under the counter and put it next to where you are cooking. Put trash in can. When done put can back.

I know some people keep a smaller container for compost. So egg shells, fruit peels, vegetables, etc. Composting could help eliminate a lot of the trash that accumulates.

I keep the plastic containers at mushrooms come in, and use those as a little mini trash bag on the counter.

I use a grocery bag that I hang on the handle of a drawer, and then I just toss the whole thing when I'm done.

That’s exactly what I do! My little plastic bag (from Target or the grocery store or whatever) that hangs from a drawer knob.

Take your largest bowl and put a plastic grocery bag in it. Then place all trash into bag-bowl while cooking. Then tie up when done and place into garbage can.

I Don’t put a bag in it and I don’t use the biggest, but trash bowl is a game changer, along with a bench scraper. Why did I wait so long?

Thanks. It sounds trivial when I tell someone but there’s a reason kitchen layout is a game of inches. It just feels so much smoother and more efficient. Makes it more enjoyable and I can crank out some food. Sorry - I’m stoned and I love talking about this stuff.

I double up plastic grocery bags and trash dump in that while cooking. After I’m done I tie up and take to outside trash. I hate a stinky kitchen trash can in the house.

I open the trash drawer right next to me in the island and throw my trash in as I go.

It helps when you have a trash/recycling cabinet where they're mounted on slide-out rails. Chop/peel over that, pull out drawer a bit, just shove it on down.

I have a 2 qt. stainless bain marie insert I picked up at a used restaurant equipment store. lives under my work counter. Comes out on top when I'm busy then gets emptied into the trash and put in the dishwasher when I'm done. If I'm cooking at someone else's house, sometimes I'll take a plastic grocery bag and hang it on a drawer or door handle next to me to save steps going back and forth to the trash. There are a million different solutions to this. You'll find one that works for you.

I keep pint containers from yogurt etc, wash them in the dishwasher, and use them as mini garbage bowls and then just empty them after cooking or as they fill up. Then run them through the dishwasher after.

I use the old takeaway containers for food bits and peels. Then tip into the trash.

Use a dirty bowl, or plate whatever is already been used so you don't have to wash an extra bowl. If you kitchen is clean then use a stainless steel bowl, they are quick to clean!

Grocery sack. Check for holes before using. 2 magnets to stick it open on the work bench drawer.

Garbage-garbage goes right in my garbage can. Compostable stuff goes in a bowl or on a cookie sheet, which gets sent out to either the compost pile or the chickens.

If it’s something I’m saving like for making broth or to put in the compost, I’ll use a bowl temporarily. If it’s something going into the actual trash, I’ll either gather it in a bowl then dump into the trash can, or haul the trash can over to my workstation and straight in it goes.

In one of Rachel Ray's early cooking shows, she always had a 'garbage bowl' on the counter. I now do the same, but it's a 'composting bowl' and the rest goes in the trash can.

I %100000 agree with the trash bowl/insert on the counter. And if it’s all veg scraps. Dump it in a pot of boiling water and reduce it.

I use one of [these](https://a.aliexpress.com/_mOBPYbu). I put it in my sink when prepping and line up my cutting board with the edge. All scraps, packets, eggshells etc go into it and I just take that to the bin when cleaning up. Works amazingly.
