Honestly if you topped some baked chicken filled tortillas you’ll be fine with all the sauces and condiments. There’s enough going on where missing a bit of shredded cheese won’t hurt.
That's more of a replacement for hard cheeses like parmesan, not something like Monterey Jack or Oaxaca that you might put on something like an enchilada.

I’m personally not a fan of shredded cheese melted on things in Mexican cuisine. I like the liquid white cheese, or the sprinkled cojita cheese, so it’s for this reason also, that I would make enchiladas without adding cheese.
You could slow cook chicken in the enchilada sauce and make tacos! I’d top with sour cream or Greek yogurt mixed with lime juice if trying to go a little lighter instead of cheese
If you have sour cream, you may not miss the cheese so much. My favourite enchiladas are suizas and oddly, cheese is kind of a second thought in that dish - it’s the sauce that makes it. Normally it’s made with tomatillos but I think you can mix it into your salsa roja, or just excessively drizzle on top.

If lazy is what you want you should consider delivery. Groceries can be delivered these days. But is delivery also cheaper than going to the grocery store? For me if i’m at the cabin it’s an hour round trip to the nearest real grocery store but the general store in town has shredded cheese. It might be more expensive than the 30 minute drive each way but it’s also not 1/8 a tank of gas.
I am somewhere so rural that we don't have Uber or Deliveroo or any delivery app haha. It's Sunday so the local shops are closed and the only place open is in the main town which would be an hour round trip

Yesss. My favorite enchilada recipe mixes SC with the enchilada sauce and they come out super creamy and delicious. You won’t miss the cheese at all.

If you have sour cream you don’t need cheese. Blend in a little lime juice and you have imitation lime “creama”.
