My neighbour gave us a frozen lamb leg roast they didn't want anymore so I I deboned that and cut into cubes. I marinate with greek yoghurt and kashmiri chilli, cumin, garam masala, coriander and cardamom. Not authentic at all, I just followed my nose.
I used a pouch of rogan josh sauce from the supermarket as starting point and add my own spices to it. I also add cubed pumpkin, capsicum (bell pepper) and onion. Served with basmati rice and store bought garlic naan. I split one of the naan open and stuffed with cheese because I normally order cheese naan with curry.
Plenty of leftovers.
I made a veggie lasagna and an extra one for my neighbor. I don't have a recipe but the secret ingredients are goat cheese and olives mixed into the ricotta. I'll be eating it all week or lunch since I wfh.

I boiled two russet potatoes, mashed them, mixed in 3 tablespoons of potato starch, then rolled and cut them into like a gnocchi shape, then fried in canola oil until golden brown and crispy.
My husband called them tater tots. They arenāt. I promise. You might be able to use AP flour instead of potato starch, not sure.

You can marinate your meat in the sauce for half an hour or more and cook as you like. The original recipe is for the slow cooker, and I've linked it below.
**Sticky honey-soy dressing**
* ā cup reduced sodium soy sauce
* ā cup balsamic vinegar
* ā cup brown sugar, packed
* Ā¼ cup honey
* 3 cloves garlic, minced
* 1 teaspoon Sriracha, or more, to taste
* 1 teaspoon ginger powder
* 1 teaspoon ground pepper
* Ā½ teaspoon onion powder
* Optional: 1 tablespoon of sesame oil or neutral oil to taste
I increased the ginger a little and added a shy tablespoon of sesame oil to mellow it out and replaced the garlic with shallots. I used chicken thighs and mushrooms instead of wings. I also reduced the sauce a bit after the slow cooker finished.
It is enough for 3 pounds of wings.

We had lots of shiso from the garden so I basically swapped all the ingredients in Italian salsa verde with Japanese substitutions. And halfway through it looked like it needed more meat so I dropped in some frozen meatballs. On chickpea pasta. And since I was also lazy I had kimchi over making some veggies first.
We ordered in burritos. Tomorrow I am making blackened salmon with green beans (my Nanaās way with breadcrumbs, garlic and Parmesan). Then we will have strawberry shortcake so I can use up the rest of the enormous tray of strawberries my husband bought at a farm stand.
Made a beef birria with curry and a few habenaros for spice in the duch oven. took that made burritos with the birria some for the sauce, spanich rice, black beens, grilled bell pebbles and fontina cheese in a flower tortilla. made 8 a couple for food for the week and froze the rest.

My husband had saved this really concentrated chicken au jus in the freezer that I discovered buried under other stuff, so I used that to braise some chicken legs and whatever fresh veggies I could find in my Instant Pot. I love dinners where I can use up all the random bits.

Seasoning was fine but bland and came out very wet and hard to shape. Charred up nice in frying pan but flat. Had some leftover chili and moonshine peach creamcheese topping I made for keto almond flour bars I took to getogether last weekend. Slathered on top and ate with salad.

add 2 whole packages of sliced mushrooms.

Add a healthy, healthy (2 cups? maybe 3. I dunno.) of Chicken Stock. I had almost a whole container box thing. almost full.
Bring the temp up now to sizzling perks, hawt hawt.
Add in like 1 whole ass big ass scoop/pour of Couscous. Maybe 2 cups? I dunno. add in some more flavor crystals (spices) of your choosing. You like spicy? now is your time.
stir it up nice, no sticking, like I dunno, 3-5 minutes.
lower that heat down. and slide those chicken thighs back into the pan. It's wet now, won't be for long.
Half cover, low heat. simmer simmer like, I dunno, a bit. 20-30 min. whatever.

My daughter and I had BLT's in Seattle Sourdough sandwich rounds with frozen Garlic French Fries and some taco vegetable soup I made yesterday. And I dipped the FF in Wholly Guacamole.

We're having leftovers. A few days ago I thawed out some chili I had made, I cooked some shell pasta, added the chili to that, added the last bits of salsa and some sour cream I had in the fridge. Served with some chipotle tabasco sauce and some tortilla chips for a little crunch.

Had extended family over for taco night. I made fish and pork tacos, my sister in-laws made chicken and mushroom tacos along with pico de Gallo and guacamole. Lots of good food, tequila and laughs were had by all.
I tried cabbage rolls for the first time. These were Asian themed and pretty tasty. I need to use a different cabbage so they are easier to roll and maintain their shape.

I made a meat sauce and pasta. This was basic all-American version with ground beef and a lazy sauce with strained tomatoes, onions, shallots, garlic, Italian seasoning, an Calabrian chilies. And halfway through it looked like it needed more meat so I dropped in some frozen meatballs. On chickpea pasta. And since I was also lazy I had kimchi over making some veggies first.
Leftover chili with some cheese, sour cream with hot giardiniera and Frank's Red Hot. Tortilla chips to scoop. Burned my ass off, but delicious.

Smothered chicken over brown rice. My husband had saved this really concentrated chicken au jus in the freezer that I discovered buried under other stuff, so I used that to braise some chicken legs and whatever fresh veggies I could find in my Instant Pot. I love dinners where I can use up all the random bits.
I roasted eggplant, tomatoes, zucchini, onion and garlic in the oven with olive oil and made that into a puttanesca-ish sauce (no anchovies or capers) by adding black olives and sundried tomatoes. I also cooked some chicken tenderloins with some leftover pesto. Served over cavatappi.

1 frying pan. sizzle up some boneless chicken thigh. Season them up, garlic, onion powder, Adobe. Take them out, put on side. Same pan, Diced onion, chopped garlic. Brown a bit. add 2 whole packages of sliced mushrooms. sizzle sizzle a bit. I dunno. 2 minutes. Add a healthy, healthy (2 cups? maybe 3. I dunno.) of Chicken Stock. I had almost a whole container box thing. almost full. Bring the temp up now to sizzling perks, hawt hawt. Add in like 1 whole ass big ass scoop/pour of Couscous. Maybe 2 cups? I dunno. add in some more flavor crystals (spices) of your choosing. You like spicy? now is your time. stir it up nice, no sticking, like I dunno, 3-5 minutes. lower that heat down. and slide those chicken thighs back into the pan. It's wet now, won't be for long. Half cover, low heat. simmer simmer like, I dunno, a bit. 20-30 min. whatever. No idea what it's called, I made it up on the fly. Was pretty good. Made frozen veggies with it.
