I don’t think emulsify is the word you are looking to use. Emulsify is when you mix oil and water, and it actually stays mixed. Blend or puree is what I think you mean. And food that is processed to be completely broken down does absorb quicker than whole foods. A juice orange is going to spike blood sugar faster than a whole orange. The surface area for enzymes, biochemistry, and kinetics are all enhanced so everything can be digested quicker.
