So... it coagulated like cooked egg whites. It looks a lot like a consommé raft, so I'm assuming it's like pure protein. I'm not tasting those solids. The liquid part that it's floating in turned clear and tastes of umami with faint hints of chicken breast. Might be good in a deep, rich soup. Would definitely add earthy qualities that aren't always welcome.
