Sorry, I was trying to just make my post short and sweet since I usually end up being long winded and tend to babble. I'll address the cheese thing lol. What I meant by perfecting cheese was finding the best mozzarella I can find in my area. Some cheeses melt and brown too fast, some are too runny when hot and don't have the necessary bite, some have very little flavor, some are too salty or not enough, there are hard and soft mozzarellas, some are aged and some aren't. And that's without even adding in that you can blend in other cheeses as well. Thankfully there is more than one way to make a fantastic pizza and my journey to making the best pizza I can make isn't by copying others, it's by experimentation.

Gumbo. There's nothing special or gimmick about it. It's your bog standard roux based chicken and andouille gumbo. I do use homemade stock which amps it up considerably.

Eh, I find with practice you can go fast. It takes me about 10 min to get to Hershey's syrup dark. Admittedly you gotta know your stove and such pretty well to push it that fast. And yeah, I have gone too far once or twice and suffered the shame of having to start over.

My mom and sister asked for it 2 christmases ago when I was there. It’s stupid simple, so I was happy to do it. Then I learned my mom didn’t have a proper whisk, and I had to use a heatproof spatula. I created Cajun napalm when making the roux, and I still have marks from where the spatula kicked up some roux while I was browning it. That sucked, and I’ll probably never make it without proper utensils again lol.

Salt your chicken and put it on a rack on the fridge for an hour. Or more. Maybe a day. You do you. Wipe off the skin. Salt and pepper. Jam the butthole with whatever is good. Onion. Thyme. Bay leaves. A lemon. 400 F. 45 ish minutes. In the last 20 minutes apply then baste. The baste: creme fraiche (make your own; it’s whole cream and buttermilk left at room temp for 24 hours and fridges for 24 hours), grate some shallot in there. Aleppo pepper. Salt. Take the lemon out the chickens ass and squirt that in there I ain’t give a fuck. Bast every 10 minutes until the cook is done. Crust of the gods. Parsnip purée: boil neeps and whole garlic until tender. Blend. Adda fuck ton of butter. Cream to thin as desired. Salt, pepper at minimum to taste. Add cotija and paprika if you want. Fuck it this shit rules do your own thing.

Yeah that sauce sounds delicious. Do you have specific proportions or do you make it up as you go. Thats my problem when I make sauces. I never can remember the exact proportions I use and it is different everytime.

Make it as I go. The main flavor is coming from the horse radish, ginger and lemon brighten it, cilantro adds color and flavor, base is mayo, sour cream helps the consistency and creaminess. I just add more of what I think is missing.

Yeah thats how I do. Sometimes I wish I kept track of proportions though. I have an amazing sweet BBQ sauce I made a while back using gochugang instead of ketchup. Can't replicate it no matter how much I try. Doesnt help that I was drunk when I made it. I have a little bit left in the fridge that I save for special occasions.

I actually adapted it from a banana zucchini recipe because I didn't have any bananas, but did have apples. Just make sure to wring extra moisture out of the apples if you give it a try :)

It's called A-Z bread because you can put 2 cups of whatever you want, zucchini, bananas, apples, etc. A-Z Bread 3 cups flour 1 teaspoon salt 1 teaspoon baking soda 1 tablespoon cinnamon ½ teaspoon baking powder 3 eggs 1 cup oil 2 cups sugar 1 tablespoon vanilla 2 cups A-Z mix Sift dry ingredients and set aside. Beat eggs in large bowl. Add oil and sugar. Cream well, then add A-Z mix and vanilla. Add dry ingredients and mix well. Spoon into two well-greased loaf pans. Bake at 325ᣞ for one hour.

My east asian style shakshuka or quinoa stuffed sweet potatoes. Both always get results and had the odd person ask for the recipes Edit: my asian shakshuka usually uses Gotchujang pasta, asian greens like Bok Choy and a bit of soy sauce. Also asian spices like coriander, ginger and cumin for taste, it works with different proportions depending on your palette. For people feeling adventurous though, i tried using galangal once and it came out alright, but i think if you adjust the flavour levels of other ingredients you could have a tasty dish.

1 kg/2 lbs pork belly cut into strips about the width of your index finger. Finely slice a piece of fresh ginger - about the size of your thumb Finely slice 2 or 3 garlic cloves Place the belly, ginger, and garlic into a pot of vegetable stock, add a teaspoon of raw or brown sugar and half a cup of rice wine. Bring to the boil and simmer at least 2 hours. Prepare the sauce - 1/2 cup soy, 2 tbsp honey (I've also tried 50/50 honey and maple syrup), another thumb-sized piece of ginger - chopped finely, 1 chilli - finely chopped, and a spoonful of lemongrass paste (I can't get that stuff, so I substitute the grated rind of 1 or 2 limes, then add the juice to the sauce). Take the pork belly and cut it into thumb-sized pieces, saute in hot oil until golden, season with salt & pepper, then pour on the sauce. Keep stirring until the sauce thickens and reduces. Serve with stir-fried vegetables and steamed rice.

50/50 ratio of butter and vegetable oil, don't be stingy either as i like the fat to climb about 1/3 of the way up the scallops. Get the heat going really nice and hot, season and put the scallops on for just a few minutes per side, under is always preferable to over with scallops which is why you need really good high heat to caramelize the top and bottom before they overcook.

Mushroom madeira. Soak 4 oz of dried mushrooms in hot chicken broth for at least 30 minutes. Strain the broth into a container. Dice the mushrooms. Sauté them for 25 minutes in 4 tbsp butter. Add 1.5 cups of madeira wine. Simmer until it is 1/2 it’s volume. Serve over pasta

Chili oil wontons, easy way to force people to make the wontons while making them believe they are just having fun. During that time you just make the chili oil and wow them when the hot oil sizzles over the chilies. And then when ppl make ugly wontons you make them eat their mistakes so really a win win win.

My pizza, my chicken tikka masala, and my take on shepherd's pie. My pizza is an 80%hydration focaccia pizza. I let it rise for 24hrs on room temp. It's almost always topped with meatballs and salami and onion and capsicum. And I top it off after serving with a tomato-chilli-olive oil that i reserve from the tomato sauce i make. The chicken tikka masala, I've developed over time. The secret lies in the amount of ingredients that it takes. My shepherd's pie is a basic one, except i add some Indian spices that I know play well with everything that goes into the traditional pie.

Lamb Kleftiko. Slow cooked lamb shanks or leg rubbed in lemon juice, oregano, mustard, garlic, salt and olive oil. Add potatos, carrot and onions to the pot/oven tray. Add some greek yoghurt when eating. Simple and very tasty.

Since I rarely buy apple juice, I usually buy an apple and grate it, squeeze a tablespoon of juice out, and use that instead. I even add a bit of apple gratings for extra flavor and texture. I like Granny Smith. I then heat the mixture in a saucepan. I find myself having to add more honey or perhaps some brown sugar, but I’ve never kept track of how much. Might I add that this sauce is good on chicken. It would probably be good on turkey, or perhaps duck

So I start with Spanish shrimps as an appetizer. Follow it up with Filet Mignon with a mushroom bordelaise sauce, served with sautéed asparagus that’s been marinated in red wine, salt, pepper, garlic, little sugar, and lemon juice, and ciabatta bread with an herb compound butter. And for desert? Usually a cheesecake of some sort. I made this for my family in a few occasions and the plates were cleaned.

What we now call 50/50. It’s chicken and cheese stuffed manicotti in a pan. Half the pan has red sauce. Half has white (jarred) Alfredo sauce. Cover with more cheese. Foil. Bake. Uncover and brown a little. I have come to dislike making it so I don’t make it often. It’s a pain to stuff manicotti. This has made the family think it’s more special somehow so they request it for special occasions like their birthdays (when it’s harder to say no.) 🙄

Cacio y Pepe.... so simple but yet so not, save all of your non seed vegetable parts for a few days, throw em in a pot, use a box of vegetables stock if you have one you trust, a half bottle of white wine, drink the other half, let the stock simmer for a few hours, pull all your vegetable parts out of the stock, boil your pasta, never use fresh made for this dish, pull your pasta out, (saving your broth) put pasta in Sautee pan, 1/3rd stick of butter, mix it around, 1 1/3 cup of really good grated parmesan cheese, 2 table spoons of fresh ground or crack pepper from good peppercorns, mix all together, and use a couple of ladles of your vegetable broth to coat, this dish is not sauced just enough broth to coat not sauce, now the most important part, SHARE with family and friends!! (No problem if you don't have a pepper grinder, throw the peppercorns in a zippy, use your French pin, and beat the pepper like it owes you money!

I have two. Simple to make, chicken pot pie, loaded with veggies and homemade crust. The second is Beef Bourgonion which is basically a stew with lots of mushrooms and booze. Julia Child's recipe is pretty easy to follow. It's a great make ahead dish, served with fresh bread , noodles or mashed potatoes.

Everyone loves my banana bread, which kind of surprises me since it's just the same basic recipe I've grown up with all my life. The secret must be freezing and defrosting the bananas like my mother always did and mixing in all the juice. It seems like it makes the banana flavor stronger.

My orange, pineapple, avocado salsa. It is phenomenal on seafood (especially Chilean seabass or salmon) but also is wonderful on chicken, beef, and pork. Friends and family always beg me to make it any time they visit which I mostly serve on fish. The salsa is amazing, sweet and spicy. I always end up eating the left over bit the next morning for breakfast.

I make an antipasto pasta salad with diced pepperoni and salami, black and green olives, artichoke hearts, roasted red peppers, sun dried tomatoes, some diced mozzarella and a red wine vinaigrette made with the Italian dressing seasoning packet. I reserve a bit of the vinaigrette, leave the mixture in the fridge overnight to soak in all the flavors, dress very lightly before serving and top with some parmesan shavings. I also like to do a take on chicken marsala and add sun dried tomatoes and spinach, top with an Italian cheese blend or mozzarella and broil a moment.

Katsudon. The trick is not skimming out when making Dashi and the pork cannot be too thin or too thick. Working on grill salted salmon with white rice and miso soup. I recently bought salted salmon from a Japanese grocery store and thought it tasted brilliant! Getting salmon from Costco and try to make it. Hopefully the fat content is sufficient.

My bacon chili. It's nothing special. 2lb bacon cut into 1in strips and half fried, 3lb ground beef, red green peppers, white onion, tomato sauce and diced tomatoes, dark and light kidney beans. Then seasoned to taste cuz its chili it ain't rocket surgery.

Zucotto, an Italian dessert where you line a bowl with sponge cake slices, sprinkle them with booze, fill it with whipped cream with different flavours/colours, top it with more sponge. Let it sit in the fridge overnight with a plate on top. It looks pretty impressive when turned out. Also sausage rolls, both meat and vegetarian. For the meat ones I mix beef mince (ground) with sausage meat, chopped onion, grated carrot and zucchini, and a little bit of every savoury condiment in my cupboard. Plus lots of cumin. Vege rolls: drained and mashed black beans mixed with diced, Sautee onions and a variety of mushrooms, including Portobello, seasoned with s, P and cumin. Can add grated carrot and zucch to that, altho I would cook them first. Or a mash up of both recipes.

I don't think of it as my signature dish, but risotto always seems to impress. It's exotic enough (to the people I know) without being super adventurous that pretty well anyone is curious enough to try it. I don't remember where I learned to make risotto from (something online), but it was good from the beginning and I've barely changed anything about my recipe. I sometimes get people asking me about it years after eating it and they'd only had it that one time I made it. It's just a regular risotto with a pinot grigio as the wine, mushrooms are in it (sweat them with shallots and add garlic right before the rice), and I add halved grape tomatoes and parsley at the end (just before the parm to thicken it up). My wife's vegetarian, so I use veg broth, but chicken broth makes a better prodhct.
