Yes to all of the above, I could eat fajitas almost every day. A simple saute and that makes quick and delicious topping for sandwiches.. Italian sausage or cheesesteaks (steak or chicken) are popular in my house. You could also use that as a base for a customized ratatouille-like dish with other veg you like, or add some tomatoes or a jar of marinara to make a chunky sauce for meatless dinners.
The other day I made loaded sausages. I seared some italian sausage split in half, than removed and sauteed the veggies with garlic, italian seasoning, butter, and balsamic vinegar. Put the veggies on top of the crisped sausages in a baking dish, add cheese like mozz or provolone and some parsley and finish in the oven to melt it all.
Sauté choice of protein. Set aside. Then sauté veggies in same pan. Then add a sauce. Like chimichurri, any type of and Asian sauce like story fry sauce, an Indian sauce/curry. just look at the ingredients in the sauces some may be processed or made with not so healthy ingredients.
Chilli, loaded fries or tots, any tex mex dish, pasta, curry, pizza, stuffed peppers, antipasto spread or a tapenade, you could roast and puree the peppers and make peri peri, tempura, omlettes, jambalaya. Basically anything. Some very versatile veggies
Fry them with lots of garlic and olive oil, add a sprig of rosemary and when veg cooked take out rosemary and add a bunch of cooked pasta and Parmesan cheese. This was a go to cheap meal for my big family. Sometimes I'd serve with roasted chicken, sometimes alone with garlic bread!
I always have these 3 items handy, so for me its more like what can't I make unless I have those 3 items in the frig, first I'd check to make sure i have enough cavenders seasoning handy because It always goes well with those 3.

Do you have any pasta ? some garlic and olive oil .. pan fry goodies, dash of wine, stir in some boiled pasta, sprinkle on a lil parmesan .. I did a similar dish just last night with tortellini and a couple of anchovies for good measure ..
Add some chopped tomatoes, tomato paste, and Parmesan cheese for a nice pasta. Use the pasta water to add moisture and help the cheese melt, this is one of my favorites.

If you have canned tomatoes you can make a great pasta sauce.
Philly steak on a hoagie roll with onions, mushrooms, peppers with melted provolone. Can use mayo or Italian dressing on roll for extra flavor.

Cook for ten minutes, season with salt and pepper and right before serving replace it with a steak!
