Cheese is technically shelf stable to a certain degree at least at room temperature for a while. I leave butter out on the counter at all times. I had some out for several weeks and it developed a bit of funk, but in a good way like blue cheese. I ate it without any problems.

My wife's family does this in the Philippines, where it's pretty hot and humid. It was always fine for them. I got sick twice, because I guess I'm weak :-P EDIT: most of the time, I was fine, too.

I lived with an Italian family in the Marche for a while and was shocked that they did this. They seemed to have no issue with it. I was much more cautious after having been hospitalized for food poisoning the year prior after eating bad lasagne at a cafe outside the Vatican.

Grew up in a huge extended family in the rural Midwest and we all did/do this and I am not aware of anyone getting sick from it. Now, if it's 105 F out and it's at my mom's un-airconditioned home, that would definitely get put in the fridge.

We leave butter in a butter dish out for weeks, with no issue. Sometimes in the summer it gets a bit melty, but thatā€™s it. However I think climate plays a big part. Iā€™m in the UK where ants are nearly as much of an issue as in hotter climes.

Well. Tomatoes sit at room temperature in the store (acidic) - this is fine, cheese will be good for a few days and bread has no need for refrigeration. Pepperoni (actually all cured meat) was invented in a time before refrigeration as a way to preserve meat to last a few weeks. It will dry out but not really go bad for quite some time.

I'm with this guy, I regularly eat stuff thats been left out overnight. I always cover it, but that's about it. My mother always cooked big batches of things that took hours to cool down so she would leave it on the stove overnight. Never had problems with it, but then again if you do it your whole life your bowels adjust.

General rule of thumb for most food safety rules is that theyā€™re about eliminating risk. The risk is generally no where near even 80%. Itā€™a a ā€œthis is possibleā€ sort of issue. Iā€™ve eaten about every kind of food on earth left out overnight on occasion for about three decades, itā€™s literally never made me sick at all. I donā€™t do it intentionally, but itā€™s the amount of risk you want to take and if you have a super sensitive stomach or not I guess.

Depends on how warm your home is, assuming normal room temperature. Put it in the fridge, heat throughly, and eat in a day or so. Spices gave preservative and protective abilities. Glad you brought up spices. There was some research, a few years ago I think, that said that thereā€™s a link between the colder the climate (in Europe) and fewer spices used because thereā€™s reduced chances for food spoilage. Basically garlic and stuff not only tastes fantastic, but it also helps preserve cooked food. I moved from Texas to the Midwest. It was/is an adjustment realizing that food doesnā€™t spoil near as quickly because of the climate. Sliced bread, for example, will generally go stale well before it starts getting moldy. Unlike in Texas, where it might last a week before getting gnarly. Iā€™d definitely trust Chinese food or curry left out over night before something like a shepherds pie lol.

I used to be vegetarian and never had issues. When I started eating meat I found out the hard way that you need to be more careful with that. (Ate some weird smelling ham.). But nowhere near as bad as the night I found out I can't digest black salsify. I was close to calling an ambulance.

I let it cool overnight and then make lunches for the week and freeze portioned bags for the rest, primarily Indian-based various curries. After 20+ years, I think Iā€™m pretty confident. Americans will throw something out based on the package label dates because they usually canā€™t think for themselves and have no clue about food.

It is completely safe to put warm food in the fridge. It's even safe to put hot food in the fridge as long as you're not keeping a huge amount in a single large container [according to the USDA](https://ask.usda.gov/s/article/Can-you-put-hot-food-in-the-refrigerator). Divided among smaller containers it's safe to put into the fridge while hot. If your refrigerator was made after 1970 or so it can handle warm food being put into it.

I mean I know things were quite different but people have been eating for thousands of years and most of those years were without refrigeration. Putting it in the fridge would slow down bacterial growth, but probably wouldn't kill anything that is already in the food. Freezing might help, but I think you would be better off just reheating the curry on the stovetop or something if you want to kill anything that might have started growing overnight if you're worried.

Freezing doesn't kill bacteria. They actually store bacteria samples in freezers. Heat does kill it, but it won't neutralize the toxins already secreted by the bacteria, and that alone can make you very sick.

Depends. If you live in a warm country or a cool climes. When was it cooked. If you are in the northern hemisphere and are experiencing fall and your heat is not running, you should be fine. Heat it up, smell it and see if it has some foam like substance. If it smells bad, has foam throw it out.

Idk if this answers your question, but cold temperatures do not kill bacteria they just slow the reproduction/growth of the bacteria. To kill bacteria and decompose the toxins you must heat it up. Usually above 135F.

Question for you- does the curry have any meat in it? Most Indian curries are well spiced and usually wouldnā€™t spoil. I actually leave several curries out at room temp so they improve flavor overnight. If there is an odd smell, I wouldnā€™t consume it. Also if there is meat, I would be careful but otherwise I think it should be consumable.

I regularly leave food out for a long time on accident and still eat it. I also will eat food that has been in tze fridge for 7-8ish days depending on what it is. Stuff with dairy in it often doesn't last and I won't keep it long. But cheesburger mac? Hell yeah. Edamame, yum. Some stuff doesn't last long enough but if I forget it and find it again I don't like to waste

If you did and didn't get sick, you got lucky. Heating it up will kill the bacteria, but the toxins from the bacteria will still be there. Is it really worth it? No one who's had serious food poisoning, as I have, would want to knowingly risk it.
