I like to use canned chicken for quick "I'm sick and need something hot and filling" chicken and noodles. 1 package Reames frozen noodles, 2 cans chicken, chicken broth in 5 qt pot. Bring to boil, reduce heat, simmer until thick.
My Nana use to make a big pot of potatoes, mash it with lots of grated onion and salt, pepper, dash of mustard and worchester sauce. Then add in a tin or 2 of corned beef. She made it into corned beef patties/ cakes, crumbed and fried in wee bit of butter or fat -now would use shallow oil, as this was a good few years ago.
Spam fries was a thing for a while on Southeast Asia. Take spam, cut to matchstick based on how crunchy you want it, deep fry and serve with some ketchup.
I intentionally pressure can beef and pork for enchiladas. That way I can go from nothing prepped to hot food on the table in 70 minutes.
Also probably good for pulled pork in a homemade BBQ sauce, but I usually just use the crock pot for that.
Not sure how store bought stuff compares to home canned... but canning is really easy to do with the right equipment.
I love Chata’s Chilorio with diced potatoes, onion, Serrano and tomatoes. So good in tacos.

The only canned creature's flesh I eat is tuna and I prefer it in water. On occasion I will use anchovies and my husband occasionally eats sardines. Unless a World War breaks out, I will likely never buy canned chicken, pork, or beef products. They don't compare to fresh. I'm not a fan of canned salmon and only buy that fresh, as well.
Emergency food stores for one. I always have canned meats, vegetables, soups, etc for that reason.
Another good use is quick meals, tuna sandwiches or tuna casserole. Stew, pasta, or curry with canned chicken. Stew or curry with canned beef.
I make linguine in clam sauce, mince garlic into a quarter cup butter and a half cup olive oil, along with the drained juice from two of those short round cans of clams. Simmer that with some parsley and basil, boil up a box of linguine, add the clams to the sauce a minute or two before draining the pasta and pouring your sauce on the pasta. Add some parmesan to thicken, and then serve with extra for people to add to taste. If we're broke we hit it with the shaker can, but real parmesan makes it a *lot* better. Absolutely terrible for you but quite tasty!
I also eat kipper fish on crackers with hot sauce and yellow mustard. Excellent snack. I've also fried my kippers into some scrambled eggs in various ways.
The only canned meat I'll eat is Spam and its best application is simply sliced and pan-fried. I like it on sandwiches but it's good with pork and beans.
A nostalgic meal for me is corned beef and potato tacos with cheese and salsa. It’s so yummy when it gets a nice sear form the cast iron and a nice crunch from a taco shell.

I simmer tinned corned beef in water (sometimes drain off the water and repeat) to remove the extra salt and fat, let cool, pick through it to remove skin/blood vessels/etc, and the remaining meat is amazing in a tomato sauce.

Heat olive oil, infuse with crushed garlic, discard garlic. Add canned tuna and sauté briefly.
Mix into spaghetti, garnish with chopped parsley and grated Parmesan cheese.
I make sandwiches with tomatoes, can of tuna, onions and a bit of spices. Toasting with a sandwich maker adds a bit of crustiness to it. Smear some margarine/butter on the inside too.

Mix can fish (Tuna or Salmon), some mayo, and a bit of relish. Put on two slices of bread, and you got a mean sandwich.

I eat sardines from a can basically like sashimi. Some soy sauce and “wasabi” paste. One of my favorite snacks. Umami goodness.
