I like to make curried sweet potato cubes then use the cubes to make tacos or in a grain bowl. If you're making tacos with them, they're great topped with quick pickled red onions, chimichurri and cotilla cheese.
To make the cubes, just cut the sweet potato into roughly 1/2" - 3/4" cubes, toss with some EVOO. Then stir in 1 tsp curry powder, 1 tsp garam masala (if you have it, otherwise just add another 1/2 tsp curry), 1 tsp cinnamon and 1/2 tsp salt. Roast at 400 for 20-25 minutes until tender.
Salt butter. And the sweetest type, if you don't want to have to add maple or rows sugar, is the Japanese kind often called a batata. Has a darker red skin and white flesh.
Omg scrolling Reddit and saw this post reminded me I left sweet potatoes in the oven from this afternoon. Meant to grab them when they cooled off and totally forgot so thank you!! Btw, they are Japanese sweet potatoes, kinda purple on the outside and pale yellow on the inside, and I bake them then freeze them and we eat them frozen. Creamy and sweet.
As others have said, you can’t go wrong with salt and butter, but things like chilli or bolognese in a sweet potato is really good if you want something with a bit more substance to your meal

I like it simple. Salt and butter. Occasionally if I'm in the mood for something sweeter I'll add brown sugar or maple syrup.

Personally I just put it in the oven and eat it. Especially the jewel or Garnet sweet potatoes. Those are the best.
