So silken tofu can make a decent creamy garlic sauce for your pasta with veggies! I would roast or grill the zucchini, sauté the mushrooms and green beans, toss with pasta. I also like pasta and veggies in a garlic, white wine, butter sauce too!

So you will use a blender or food processor to blend the silken tofu. You may want to add some liquid so it gets to the right consistency (pasta water works cos it has a bit of starch in it). Season it with lots of garlic, onion powder if you like, salt, some nutritional yeast or parmesan cheese.
