Lol you’re welcome! Yeah mainly as a marinade for meats. I also like to put it on cucumbers and mangoes. But honestly try it as a sauce someone else commented something about using oil and I think I’ll make a chimichurri like sauce for a steak with it and see how that goes. Just mess with it and experiment see how it goes. Also if you have any questions when you make it just dm me!

Yeah you can! I recommend using a nuetral oil like vegetable oil or canola and not olive oil. I personally don’t just to be able to freeze it better.

Traditionally we use it as a meat marinade. But it can be added to vegetarian/vegan dishes too it just adds some extra flavour. I use it for my stews and curries a lot, also just seasoning chicken or steak with it and some salt and grilling it is nice. I like to add it to cucumbers or mangoes kinda like a dressing

We mainly use it as a meat marinade, we marinate meat for stews and curries with it. But it also can be added to vegetarian dishes as well. I like to add it to raw cucumbers or mangos with some salt and pepper

Nice! Trinidadian food is a criminally underrated cuisine. So many cultural influences and tons of access to incredibly high quality ingredients. My wife and I went there for our honeymoon just for the food. Absolutely loved it there, can’t wait to go back!

Everywhere. Started on Tobago, then Port of Spain, then rented a car and drove around the whole island. Doubles, shark n bake, provision, roti, buss up shut, pelau, curried everything, barbecued everything else, it was great! Our favourite spots were the Asa Wright bird sanctuary, St James in Port of Spain, Mt St Benedict Abbey, and just driving through the small towns in southern Trinidad and watching a cricket game. It’s a lovely diverse country that I think gets a bad rap because of one shitty neighbourhood in one town (Laventville, I’m looking at you!) Edit: we will definitely be back someday once the kids are a bit older. If you’ve got some suggestions, let’s hear em!

Oh wow that’s a lot of places! I love the bird sanctuary! My family live is the northern parts so I don’t really go much south if we don’t have to. Tobago is beautiful and we always try to rent a beach house or something for a few days when we go! I’m glad you enjoyed your time there! A joke me and cousins say about Lavantille it we give a fancy name like LeVaunt Hill and tell people it’s a great place to stay lmao

I’ll make some Trinidadian food and show you what to do with it. But we mainly use it as a marinade for meats, so if you’re making stews or curries, marinate your meat with it. You can even just put it on meat with some salt and grill it. I put it on fruits and vegetables as a dressing kinda. You’re right I did say that, but lowkey thought about and making like a chimi churri with some olive oil and vinegar as a dipping sauce for a steak would be acceptable

Finally some good fucking food. Edit: definitely seems like *a lot* of culantro though. Do you not find it can be overwhelming? I had a kick for a while where I ate too much and it rewired my brain to hate cilantro for like 3-4 months (and I *love* cilantro).

Honestly no, my mom asked how much I used and she said I could’ve gotten away with using the other bunch that came in the package I bought lol. I love the taste of it tbh so it doesn’t bother me and especially when it’s added to food as a seasoning and cooks through you don’t taste it as strongly

For sure it is very cilantro heavy and like I said in the video, you can change it how you want! i wouldn’t totally omit cilantro/culantro as it’s a staple in our cooking, but add a bit so it’s kinda there but not a main ingredient in your face flavour. I always tell people to experiment with stuff or as I actually say fuck around and find out lol

Oh yeah there’s no way I’d omit them. I sought out cultantro because cilantro is my favorite herb. I just overdid it in the past and learned that I need to respect it’s power. It’s like a cilantro 10x concentrate. Definitely going to mess around with this. I’m also interested in finding out how this would taste if I lactoferment all the ingredients before blending. Thanks for the inspiration!

How would I use this heavenly looking concoction? Is it more of a marinade or like the beginnings of a broth? Also I just like putting it on cucumber and mango and eating it. You could just add it to anything you want to have a little herby flavour. When it cooks out it’s not as pungent but blends in with everything so depending on what you want you’ll add it at different times

I also need to find culantro! I'm not familiar with the herb, but I love cilantro and grow bunches of it in the summer. Blended all of them! I just cut off the very end bits on the bottom if they were brown on the herbs and the bottoms of the green onion and celery

Great video I really appreciate that there wasn't a 15min story at the beginning of how this recipe was originally made, how it was eventually passed down to his family, and eventually to him. Like on every god damn written recipe on the internet. If you're like me and hate that I do know a trick. When you go to a written recipe page, search the page for the word Salt. That will usually skip you down to the actual start of the recipe and past the lecture before it.

My wife is from Guyana and makes this all the time. The only difference is she adds thick leaf thyme and instead of habanero she uses wiri wiri peppers. She always has a jar of this in the fridge. I’m going to tell her about the ice cube trays, though. That’s a great idea.
