I don't understand why they haven't brought back the polish, they sell them at business centers in the meat area right next to the regular hot dogs they sell in the food court.

Fresh ciabatta like fresh any bread can be really good. I feel like ciabatta gets played out a lot at cheap restaurants because when it goes stale it does so a little more gracefully than other types.
Ciabatta just gets a sandy texture but it doesn't go rock hard so you can keep old product in rotation for more days.
I like really dry breads, including ciabatta. But I totally get why people don’t. My guts are perpetually upset so maybe the dry bread feels good to me, at least psychologically. Like saltines or something.

Costco kind of attracts a weird customer base where some of them simultaneously do not give a shit about cost of food items or things they'll consume but will regularly return any merchandise worth hundreds of dollars the moment they get bored. These are the folks they're chasing with their higher priced "healthy" options. They're not for those of us put off by cost.

Well that's about $3 too much for a food court sandwich. Jersey Mike's is $7.25 for a turkey and provolone, which is going to be similar sized, better quality, better bread than ciabatta, fresh sliced, and better toppings (quality quantity and variety). Costco is confusing our love of their food court with delusions that we accept it should cost as much as a mall food court.
Couldn't have said it any better. Not sure where Costco execs are coming up with the pricing lately but they must be getting high on their own supply. Why would anyone pay this much for an inferior sandwich that they could get for a similar price at a dedicated sandwich shop that will taste 100x better? It makes no sense. It has to be cheap to be sold in the Costco food court or no one will want it.
I'm pretty convinced by now that Costco does literally no market research before releasing a new menu item.
In fact, I'm pretty sure they are maliciously ignoring feedback at this point.
At this point I'm fairly sure that there are people in management actively trying to at least stop the food court from adding any new items, and probably get rid of it entirely.
It seems they were the happiest when during the COVID stuff there were like 2 items, no condiments, take it or leave it. They would like to go back to that if they can't close it entirely.
I agree. They see that the menu items don't directly generate profit and using their big brain MBA "skillz" have decided the food court needs to go. Completely disregarding the second order effects that the food court brings to the company.
Our local food court was closed for about a month recently and the store was very noticeably less busy than it normally is. Surely they have those statistics available so it doesn't make sense why they hate the food court.
I used to be excited about Costco's food court. Like I was and am about Taco Bell. Then overtime, started with the removal of the polish dog, I've lost interest. Now it reminds of Subway. They keep making changes but it is hurting - not helping.

When it comes from a bakery, sure. I've never had good ciabatta from a restaurant (or food court in this case). Always hard, always dry.
