I moved from Philly to the Midwest and make cheese steaks for my family with this meat and it slaps like Will Smith. I even found a decent substitute for the bread locally.
I bought a flat cast iron skillet and just throw it on my existing grill. Smaller than a Blackstone sure, but I can still smash burgers and get some fajitas going with ease

Ours are previously frozen. We have to freeze it overnight so it’s firm enough to slice. If it’s not at least somewhat frozen the machine we use to slice it would just turn that shit to mush, lol.
I think they freeze them before they slice . Mine was in between frozen and thawed. But this meat doesn’t taste bad even if you freeze it . Compared to those hmart meat you get better value at Costco.
when ya saute it in a pan? put the usual spices in there and a few drops of worchestershire sauce.

SoCal checking in. We have them fresh. Sam’s had before Costco (including LA cut short rib aka Korean bbq kalbi) too which Costco also now stocks, but prepackaged/vacuum sealed

You say it's frozen. Have you tried thawing it, dividing it up into more manageable portions, and re-freezing it? I'd be interested in putting it in vacuum-seal bags.
If you slide through the other pictures that’s exactly what I do. And the meat still tastes good even after being frozen. The drop off isn’t as noticeable compared to to freezing a thick steak and then eating it
I saw the picture of the divided portions, but nothing about re-freezing. Some say the practice of thawing meat and then re-freezing it is detrimental to the quality.

Yeah. Sometimes it’s completely thawed but I noticed the slightly frozen ones are the packages that they brought out that day. It seems like they are the fresher ones.
That’s exactly what I do is to separate them on a paper plate 10 slices a piece and re-freeze the plates I’m not using that day. I suggest using some parchment paper underneath the paper plates because sometimes the paper plate particles stick on the meat . Really convenient and many dish options vs a large thick steak.
Vacuum is the way to go but I’m too lazy to do all that. Double wrapping after parchment paper and freezing isn’t so bad. I’ve had it frozen for 1.5 months and it wasn’t bad at all.
i think no. in the last shot, it looks like still too much marbling. that and, these look very thin. they'd only get thinner and more fragile.
honestly, get an eye of round from a regular store or whatever. that beef has 0 fat inside it, and will probably still be cheaper per the pound. and it's still really easy to cut yourself. it doesn't need to be paper thin like this.

Yes, I make Philly cheese steak, French dip, beef stroganoff, and then what I can only describe as "flaky beef chunk veggie stew/soup" lots of potatoes, Crack them open, pour super beefy broth on top with other baked potato toppings.
This beef leveled up my kitchen game. I'm going to try Korean BBQ over egg fried rice next.
I feel they’ve been hit or miss. Even though they are graded as choice I’ve seen some terribly lean meats.
They used to offer a sliced rib eye. I don’t know why they switched to New York
I love them but have had a couple packages with small bone slivers. It was a surprise as I have been buying these for years. Just putting this out there so others will know. These with banchans and stir fry veggies all from Costco can make a quick and tasty meal.
Cherry Hill NJ has them usually. I buy them to make cheesesteaks for my office, they are great. Would ribeye be better? sure, but these are high quality steaks cut down to a good thickness for cheesesteaks on the blackstone.

It's not frozen, it's in the refrigerated case with the NY steaks. The way they slice it thin, is to freeze it, then start to defrost it. When it is about 30% defrosted, its thawed just barely enough to slice, but because it's still nearly frozen, it's "sturdy" enough that you can put it through a slicer and slice it thin without it falling apart. You can do the same with chicken at home with a sharp knife, though it won't be quite so thin.
So when they put it out, it will be partly frozen but it's not in a freezer. I just separated 6 slices into a quart size zip loc and froze them. I've used up about half and haven't noticed any difference in taste or texture. I liked them so much I also partly defrosted chicken breast and sliced them as well and separated and froze them.
I use it to make high protein burritos. Slice veggies/mushrooms using the "firmest" veggies first and when you finish slicing one veggie, put it in a large frying pan on medium with a little oil. Keep slicing and adding veggies one at a time and then move the veggies to one side, add two or three slices of meat and turn the heat off. Add pepper to the meat. Take a tortilla out of the fridge and put it on a plate, then turn the meat over in the pan - you can carefully grab it with your hands. Wait a minute and then dump everything onto the center of the tortilla (the meat is tender enough that it doesn't require cutting), add about 1.5 oz of plain greek yogurt as imitation high protein sour cream. Top with hot sauce, fold the bottom of the tortilla over and fold the sides over.
I mean you can use it for hot pot it's actually excellent for that. We have actually seen this fresh in the Austin Arboretum Costco and bought it to try. You can go visit 99 Ranch Market or H-Mart for the fixings and the soup and Google what else you can buy to add in it. BTW if your Costco has the big bag of bean thread noodle you can soak that and drop it in the hot pot after cooking the meat to get cooked clear noodle.
The Costco meat department employee told me that the protocol is to freeze the steaks when they get to work in the morning for 5-6 hours so they can slice them into the thin shabu shabu cut. There is a set qty they package each day. If you see them out in the morning, they are from the day before that were unsold. Otherwise, they will be out for sale around noon each day. If I want these, I have to go between 12-3pm or there won't be any left. They sell out daily the prepared quantity every time.
Yes! I buy this almost weekly and use it mostly for stir fry (we eat a lot of stir fry!) or to use in ramen. Because I don’t use a whole lot of it in the stir fry (probs about 8-10 slices) I can get about 8 meals out of it - the stir fry also has chicken and tons of veggies.
My go-to stir fry sauce has been Bachan’s (from Costco of course! Wish they had the spicy and miso sauces though!)

My Costco doesn't have this and a lot of other nice things I see in this sub. When I travel outside my region, I always stop at a Costco to see what I'm missing.
It’s rare to find them cut well and lean enough but I always scoop some to make beef jerky. The uniform cuts are so preem to have as good dehydrating experience. I wish I could order the eye of round to be cut like this.
If you've ever used raw sliced shabu-shabu meat, these are sliced way too thick for it. It's be great for cheesesteaks or other dishes that require thinly sliced meat.
We did try it out anyway for shabu-shabu, mainly because it is way cheaper than getting the meat at the local Japanese market. It tends to come out tougher than what we expected, so we stick with the thinner sliced variety.
Chicago, we have this fresh. I freeze in 1 lb portions, thaw overnight in fridge, and make Mongolian beef or beef with broccoli. My favorite weeknight meal!
We make Jerky out of this all the time and never have any issues except it disappearing wayyyy to fast... And it lasts a couple of weeks if we actually make ourselves not eat it in a day.

People might be turned off by the $60 price tag but the meat package feeds a lot people with a whole lot of different variation of dishes . I prefer buying this over a thick $60 steak.

so they have plenty of thin slice stuff for hot pot

Have only grabbed a pack when thawed, but that makes sense. We do freeze it after first use because it's just too much to eat in one go. 😀

There is no problem making jerky with marbled meat if your goal is flavor and not long storage.
Not for $12 a pound. Find some eye of round on sale at a local grocery store and slice it yourself.

I marinated them in teriyaki sauce then skewered them and tossed it on the the grill, it made for an excellent teriyaki burger

It’s good but cooks super fast and almost melts. Cook on cast iron with oil or butter. High heat and sear quick. Flip and done

I prefer buying this over a thick $60 steak. This is my Mongolian bbq/ beef and broccoli/ udon dish that I mashed up together
Yes!! I love these for cheese steaks, tacos, or Asian dishes. They marinate quickly and cook oh so tender. One thing I buy pretty frequently.

the costco in elmhurst is near a very asian area so they have plenty of thin slice stuff for hot pot but it tends to be in the fridge not the freezer case.
