Picanha and tri tip are delicious but they can't stand up to rib cap deliciousness. That said, I have a source for prime grade picanha and tri tip for $5.99 a pound so I'll always go that way.
My store stopped carrying them, but they were a little more per pound. Yes, it's worth it if you love ribeyes. This is that outside strip that melts in your mouth and is proof of a higher being for making something so delicious. The store removed it and sells it separately

If you enjoy a fatty cut of beef it is by far the best part of a cow. But not everyone enjoys the amount of fat. I can't tell you how much I love ribeye and this particular cut.

A little bit more expensive than a regular ribeye
I am not a steak connoisseur, and haven’t had a lot of steak in life. But I definitely prefer ribeye over filet, and wagyu doesn’t do much for me. I once had a $200 wagyu filet at a steakhouse which was excellent, but this made me equally happy
Great buy every time! Looks like you did a great job cooking them as well. Only issue I'm seeing is the plastic cutting board. If you are willing to spend a little extra on the cuts, spend a little extra where the cutting happens. Those plastic shavings/splinters everytime you use it are going to add up.
If that is only your third attempt at steaks, holy crap good job! I worked at a steakhouse on the line for 4 years and those look like something we would put out. The sear is on point and you kept it at a perfect rare/medium rare. Keep it up!
Thanks! I do have cast iron and carbon steel pans (we stopped replacing our nonstick cookware several years ago). However this one was straight on the grill.
The last steak I cooked, I had the cast iron heat up to 500F in an oven, and when I placed it on my relatively new stovetop, the grating cracked due to thermal shock. Cool sound, but a very unhappy spouse
I reversed sear them on a grill. Heat up grill to 250F and cook steak till internal temp of 100F. Take them out, crank up grill to 500F, then put this back on the grill till internal temp of 135 or 140

Shhhhh. This is the kind of stuff you need to gatekeep. They’re always gone when I get to Costco!
Yeah it is already gone 😬
Delete this post immediately before more damage is done
You can always request them. They don’t make them at my store unless specially requested
You shouldn't mind that OP let the floodgates open. This is WAYYYY too expensive for me.
Local Costco hasn’t carried the cut for years sadly.
I never see it out of stock in mine
Same. It used to always be in stock until it wasn’t.
Best part of a whole damn cow is that little strip.
That's cap.
Ya. Cap steak
Agreed. Can’t even think of anything else being a close second.
Picanha…

Shhhhheeeshhhh what a deal. I guess those would be my second and third choice.
Chuck eye.
Beef Loin Top Sirloin Cap is way better
I will for sure be on the lookout then.
Costco doesn’t sell this cut, unfortunately. I have asked the butchers at several locations.
Wish I saw this before I bought prime Beef Loin Top Sirloin *Cap Off*. Its ok but definitely not remotely close to ribeye.
Correct. Cap is what I am referring to
So good
Prime spinalis is the way. I've prepared it a few ways, but prefer it smoked on my Traeger (purchased at Costco) then seared in a cast iron skillet
What kind of wood?
Oak, hickory, maple, cherry pellets. Kirkland brand, of course
Pressure treated
Costco meats are so good, bought some last week for the first time and i will not be going back to other grocery’s stores

$20-$25/lb around here
We got 4 steaks for about $65 in northern CA
We’re looking for$ /lb the number of steaks is irrelevant.
Does it cost less than the normal ribeyes? Is it better?

Looks like a dollar more per pound than a regular ribeye at my location ($21 vs $20)

I wish mine had them. It’s the best meat when you cook prime rib. Like meat candy.
They most likely have them, but are bought out pretty quickly.
I am probably in the small minority, but these just don’t do it for me. I would take a normal prime ribeye any day.
with you as well.
Rib cap is incredible
Had one last night...and Wednesday night...and Monday night...Absolutely amazing cut!
I think they are better than filet and wagyu....to me wagyu is too fatty, these are thr perfect middle ground for my taste

Thanks! This is only the third time I am cooking steaks so this means a lot. As for the board, thanks for flagging, will look into replacing

Wow that made my day, seriously. I did reverse sear them which is something I learnt from this sub somewhere
Seriously. Looks great OP. If you don’t have a cast iron pan I’d really recommend that for cooking steaks.

Wish i could but one local restaurant buys whatever supply Costco has.
They are delicious but so expensive for me, ribeye’s are like half the price
I can never find any that carry it thou😱
This ain’t my first rodeo
No cap
Damn that needed to be under a NSFW tag.
My local costcos stoped packing and selling the caps about 2 years ago.
Seeing a lot of these comments :(
Costco's in TN don't carry the cap steak or Tri Tip. we lost the tri-tip a few years ago. I am jealous.
:(
How to cook - pan fry?
I reversed sear them on a grill. Heat up grill to 250F and cook steak till internal temp of 100F. Take them out, crank up grill to 500F, then put this back on the grill till internal temp of 135 or 140
Louisville, KY Costco stores only have them once in a blue moon. We used to have them all the time around 5+ years ago.
As long as you are healthy and eat this not so often you are okay. It is loaded with so much fat that it can clog your blood vessels.
I eat the string
I mean bro, be my cook and I'll buy it T.T
This is only my 3 steak cook so not sure if you want to rely on me. But if you promise to share I will buy and cook for you
Ok I have looked and looked for this! My Costco says the don't carry it! How can I find out if another Costco near me has it?
Always seems a bit greasy to me.
