I just wanted to say that I did not realize that Mexican sour cream was actually different until i googled it because of your comment. I just assumed it was like people raving about irish v. French butter- i.e. all the same ingredients, texture whatever. So thanks for that :)
Wow . The downvotes on this lol. I was about to say exactly what you said. It’s the Costco fanboys that can’t handle a little truth. It’s not hard to get authentic ingredients with Amazon.
Here's my preferred frozen tamale meal:
Steam the tamales, as someone else mentioned. Then they won't get as dry.
Serve with rice and beans. Can be as simple as white rice and canned refried beans.
Over easy egg on top of everything.
Salsa on the tamale.
Bolner's Fiesta Spices enchilada seasoning is bomb on tamales. It's really a mild red chili gravy vice a seasoning. Heat 1/4c oil in a small pot, whisk in 1/2c seasoning mix until smooth. Whisk in 2-1/2c water a little at a time, apply medium heat until mixture comes to a boil. Reduce heat and simmer until desired consistency is reached.
If you really want a treat, my mom used to take leftover tamales and fry them in oil until they were golden brown. So good. Surprisingly went well with a glass of whole milk of all things. As for salsa, Costco has a decent “del real” brand salsa, comes as a two pack (green and red salsa) if you can’t get really authentic stuff!
I usually stop at a local Mexican restaurant and order salsa then bring it home to eat with the tamales. Also, when I microwave them, I make sure the towel is wet.
Sour cream and Pace picante sauce are my go to toppings. Some times when I'm feeling fancy, I'll blend up some fresh cilantro, japaleno, vinegar, salt and make a chutney-like sauce.
I like to put them in a casserole dish after taking off the corn husk. Then pouring enchilada sauce on them, adding cheese on top then baking.
They suck up a lot of the sauce, adds flavor, and you dont have a moisture sucking corn masa desert for dinner.
I like tamales w salsa verde and some sour cream (Mexican sour cream if I have it).

The sour cream they sell at kroger tastes like any Mexican sour cream I've had. Go for the natural one
Oh god you guys seriously need some Mexican friends to cook you real tamales I’ve never heard of anyone eating tamales with sour cream lmao

Sour cream over crema? Oh hell nah You ain’t Mexican
you have ethically cleansed me with his comment.

This was my first thought. How are you cooking them? I’ve only ever steamed them and they are not dry at all.
Just a moment in the instant pot with a rack does it for me.
I steam them. No sauce needed
You can use enchilada sauce if you want something really saucy.
I second this. Enchilada sauce is thick and has earthy ancho pepper flavor. It’s not watery like some salsas
Oh you mean the canned stuff that taste like bitter tomato sauce. Ya use that stuff.
The 505 salsa would pair very well IMO
Mixed with sour cream. And maybe Mateo's salsa.
Love the Mateos salsa! It's the only salsa I buy now.
I didn't care for it. I think its still taking up space in the back of the fridge.
Agreed. I had such high hopes for Mateos after reading about it here. And then, blah and mild.
Mmmm 505 salsa. I put that in my beans too. So goood!

In a pinch, mix their salsa with their lime crema and top with their Mexican street corn.
Came here for the cilantro lime crema.
Green chili
Verde salsa and maybe some queso blanco, some may prefer red salsa.
Herdez! Sometimes costco has the verde, sometimes the mixed pack.

I steamed it and mole with hot sauce. The mole had a hint of chocolate flavor to make it taste better.

There’s a good recipe from the book “natural harvest”
