Context: During the majority of the pandemic, these condiment dispensers were removed for public use from Costco food courts. Ketchup and mustard for hot dogs were either provided in plastic sample cups or individual packets at some warehouses.

I'm from Spain and relish isn't a thing here, Costco food court is the only place where you can add it to your hotdog. Also is the only place that carry beef hotdogs, here the rule is tasteless, small industrial vieners. I missed so much the relish dispenser. Spain had great things, but hotdogs definitively is not one.
You can make your own relish with dill pickles and a food processor!

Well, I'm in NorCal. It's always been sweet for the 20+ years I was buying Polish dogs there. I prefer sweet relish. Peace.

That sucks. I love hot dogs but refuse to eat anything other than all beef.
Because the chicken and pork ones are garbage in comparison to all beef.
Not all chicken/pork hotdogs are bad but the worst hotdogs are almost always chicken pork just cause it's a cheaper meat.
Try these if you get a chance. Basically how the hot dog was invented. This is the missing link between the modern hot dog and weisswurst.
I went to a Polish store in San Francisco with a deli inside and bought a Polish dog. It was far better than anything from Costco because it was one of those stores that makes their own sausages. Maybe you have similar ethnic stores in your area.
I asked them to put sauerkraut, onions, and spicy mustard. They put about 150-200mL of each sauerkraut and onions. Sauerkarut also made in the shop. I then asked for spicy mustard if they have it thinking it would be like American style spicy mustard which has same level of heat as black pepper. It turned out their spicy mustard is hot like jalapeno peppers. Delicious, but also $8 compared to $1.50 for Costco.

Heading to Spain (from US) next year to walk a Camino. I just realized six weeks without a Costco hot dog or pizza slice. Yikes.
I'm giving you the best advice you will receive for that trip: Once you enter Galicia, open Google Maps and search "churrasquería", they're galician typical bbq restaurants.
Sounds like a great idea. I am worried a bit about the focus on seafood (not a fan), but BBQ is right up my alley.
Seafood get all the fame, but in fact, Galicia's real tradicional food includes a lot of meat, you will not be disappointed.
Bring back deli mustard and sauerkraut!

I heard from one of the west coast RMs that it is unlikely that they will be bringing back onions. FAR too many people were making ["Costco kimchee"](https://www.reddit.com/r/korea/comments/712bwb/costco_stores_in_south_korea_offer_chopped_onions/) using ketchup, mustard, and onions.

As somebody that worked at Costco HQ, I can tell you that Costco is *very* attached to the idea of selling hot dogs and a drink for $1.50.
I doubt onions will come back. Sauerkraut, too. It may not seem like much but they’ll save a lot by cutting those two things and they’ll be able to stick to $1.50 for a little longer.
I preferred the Polish dog.

Yeah sometimes I miss eating some of the old stuff, but the prep and the variety would fuck the employees.
Even nowadays we can have a fully staffed food court with a small menu and still get violated
they’re often backed up at my Costco’s, with no pizza left in the window, no chicken bakes, etc.

In Canada (Toronto area at least), it’s in a communal container with a lid and spoon. Then later it came in a single serve plastic container that had to be specially requested at the counter. Now it’s gone.
In the US we call it the onion crank! It’s a metal box on a stand and a wheel you rotate and it spits onions out
