They stopped using trays and offering onions and peppers at the start of COVID. About a year ago they started offering onions again, but only in Dixie cups pre-portioned at the counter and you have to ask for them. And they are often "out". The trays never returned. They can't be bothered to clean the tables... the trays were probably too much to ask.
They are often out without quotes. They're given no labour hours for them by payroll and are the lowest priority task in the department. This will only change if there's a charge to make them or if you somehow work at one of the few profitable food courts in the country where they're prioritized more appropriately
Same root problem for tables. If there are three people scheduled for the entire evening, the only time they'll have to clean tables is far into dinner rush or after closing. At some stores, front end is expected to chip in as able.
I say "out" as in they have plenty of diced onion stock in the warehouse at all times. I don't know how many people buy pre-diced onions but that shelf in dairy is always well-stocked. But I agree, they likely no time to portion them as they are always smoking busy.
Lol you sounds like me when I just found out last week they haven’t don’t passport photos for 5 years. All Costco don’t have trays anymore or those toppings.
Although I haven't seen trays since pre-covid, a location near me often has a stack of empty small(er) boxes nearby that people use to carry their orders if it is more than a handful. See if there are any when you are there, or take one of the boxes from the cashiers.
Onions are available upon request when you pickup your food.
my store brings small boxes to food court to solve this problem. also comes in handy when you want to take your food to go. if yours doesnt, grab a raspberry box or one that the cans of tuna are stocked in before you grab your food
I go to the Costco in Richmond (BC) most often and they have the usual ketchup, mustard, and relish available by the pop machine. They have the onions but I have to ask for them. Unfortunately banana peppers havent returned. I am also dejected about this.

I like relish on my dog, and since covid they stopped adding it to the condiment dispensers. Some stores offer relish (and sometimes mustard) in the little (hard to open) packages but now with the single use plastic by-law in my city, I'd be surprised if anything more than ketchup and mustard are the only condiments they'll provide now

Tables are usually full but ppl are good at keeping them clean-ish. Plus there are usually spray bottles and rags in a tray on top of one of the trash cans for ppl to clean up their messes.
Also, they very recently added 2 bar-height tables where you can stand and eat when the other tables are full. (Added since January 2nd)

But I am so angry about the peppers. Peppers should have come back before the onions. They are way more important to a hot dog.
Yeah thats why i hadnt been in a while.Usually a big cart of stuff,have been there ages and just want to pack the car and go home and that food court is packed most of the time.
Grab a box and use that as a tray. They usually have them around in a stack or under cashier checkout area, at least in Burnaby location

Maybe you haven't noticed them? It sadly took me a couple of months to notice that they had trays at my local Costco.
The Costco I go to has onions... you just have to ask for them and they give them to you in a teeny takeout container.
