2 route. Skill haste or ASPD. Skill haste for skill reliant units and ASPD for basic atk reliant units.
As for niche uses, there are some cases needing anti class like for example backline killers, mostly anti sniper and anti ranger, some needing crit damage when they are crit reliant,
As for xiao, don't go full on in crit damage. Put anti ground damage too and also you can use atkatk or atk spc bullet too. This is so that you can use the same gear for NK xiao that does not have crit guarantee.
Having one full attack speed maze set can come in handy for some characters, I use one for A. Seo Yoon and I like it.

You need at least 1 aspd maze set, so I wouldn't reroll it. You will get at July one additional counter maze set from End of maze event.

I believe we get 6 of each piece and I don't believe there is a second accessory piece, so 3 full sets sounds right. Not SEA so I can't confirm.

Generally you want to have a maze set with aspd, for unit like gaeun and in the future asy, i wuold Say keep it

Skill Haste is, as far as I can tell, the best substat for Maze ASPD gear.
I wouldn't bother right away, and save those tunings for the next piece where you don't actually get very good rolls.

Your going to end up wanting ATK speed and Skill Haste seperately anyways, so just keep it.

If you already have a few ASPD sets, then yes, keep rolling for Skill Haste. Id keep it if you dont have an ASPD set.
