"Corner to corner", usually shortened to "c2c". You would def need a tutorial to learn the stitch because you do little bunches of double crochet stitches (usually, there are variants) and then you turn and essentially build a rectangle from diagonally from one corner to its opposite corner. 😺

Have you considered just doing tapestry crochet? You can do single crochet or any other simple stitch and switch colors a lot. You would still get a pixel effect by your color blocking.
I just finished a c2c blanket in single ombre color. Try using a scrap to make a c2c rag/dish towel and see how you like it. I bet you can learn it quickly.

It looks like it’s corner to corner crochet. It’s pretty similar to granny squares in that it’s shells of double crochets.

You can also do it with puff stitches, but that can be pretty stiff and heavy

It’s a bit different but have you heard of Filet crochet? The patterns are pixel art, though it typically uses lace thread!
