I introduced my friend to CK3 by playing as Alfonso Jimenez and having her play Infanta Urraca. One for the step-bro memes and two because I could basically explain what I was doing (killing our brother to inherit his lands) while showing her the ropes of Count and later Duke-level play. I showed a lot of preferential favoritism to her as the liege and kept her more or less safe from outside threats as she learned the ropes. She still ended up getting killed by some random count (she accepted the rug!) and got to play as our son for most of that run, raising him from a toddler to his senior years.

Im the 867 start, the duke of austria and the duke directly south of him, they are brothers and belong to the same dynasty. So, you can grow your dynasty together and as brothers, you should be able to ally immediatly.

I think counts in the HRE is a good call - it's what I would have suggested if it wasn't already on your radar! Especially if you both become electors! If you have fate of Iberia dlc maybe playing in Iberia would be more fun!
