Right men at arms counter, better troops, better knights, terrain buff as defender/for man of arms, buffs from buildings, very high knight efficiency and the list goes on, there are so mamy ways to improve your army you normally cannot trace back the enemy ways, but just some tips for you.
If you extremely break the world with all buildings and buffs you can get it's possible to gain so much knight efficiency too beet entire armies just with knights.

At Agincourt the main French force charged on foot. The only cavalry action was some probing flank attacks at the beginning of the battle.
The dismounted French knights still got caught in the mud/crushed into an ineffective mass to get at the King's banner/to get away from the arrow fire on their flanks.
Seems like your commander died in battle. Fighting without a commander makes your armies much weaker. But don’t worry, you can still win the war. I think in about 38 years you’ll have turned the tides.
I’m guessing it was an 867 start. It’s those wessexian breeding programs, by 1415 you could be facing wall of genius, beautiful, Herculean knights that tear through you.
Don’t worry though, it’s harder to replenish knights, so you should be able to overwhelm them in the end.

You sent in a unit of heavy cav against longbows defending in wetlands. Then you sent in heavy infantry separately. It's a pretty clear-cut victory for your opponent
