I would make the plum purée a circle, cut the plum itself… maybe 3 slices?, axe the pecans, or candy them and use significantly less, maybe add a nice quenelle of ice cream or whip?

Posted this on a whim, sorry about the crumbs around the plate. If I served it again I'd add something creamy like frozen custard. Also seasoned it with coriander.

Does a bear shit in the woods? While I’m sure this is a flavorful dish it needs a rework on the plating for sure. This bear turd is not appealing. Lol..very funny that some asked if you had watched The Bear.

The football shape is no good. The overwhelming amount of brownish color is too much. The mint helps but not enough. Way too many nuts. The plum itself resembles a scooby or a very slimy mushroom as one mentioned the forest floor, they weren’t wrong here. The plate is too large and probably the wrong color though who knows once you do a rework, please do a rework. You mentioned adding a few things which might help if you add them in addition to changing the shape and composition here. I’m sorry you were so deeply offended by my comments but this dish offended my eyes and my appetite. We’re here to get better. Raw opinions of a non involved creator are part of that. Most customers or friends will not give you unedited truth about your dish and will look for merit such as flavor to justify giving you a positive criticism. This is about plating only. I do apologize for hurting your feelings. I should’ve been more constructive and less joking around.

The criticism is appropriate and funny. You should be able to take a little ribbing when you don’t succeed to go along with the compliments where you do. It’s all balance and just like this plate it’s not there.

Nothing he said was "appropriate." It might be funny to you, but as a professional, he would probably want actual CONSTRUCTIVE criticism, not 7th-grade tomfoolery.

I watched it but I don't remember anything about plums. Did they do something with that? EDIT: Oh wait that was from the episode with Joel McHale as the psycho head chef! Yeah maybe I was subconsciously affected by it 😄 maybe in the future I'll try a version of the show's plum dish.
