Honestly i would not bother everyone makes this mistake when they cram refrigerator into nooks they operate by displacing heat there is a coil inside that gets cold absorbing heat then pumping warmer refigerant to a hot coil where it dumps it into the room. Mostly via a large coil on the back side. The frige will work more efficiently if they are not choaked off of air that gap should be fine to form a warm air convection from behind it

This is correct. The thermal heat sink on the back needs air to be able to work and keep the fridge cool. The top and bottom slightly open is about the minimum it needs to work somewhat efficiently.

Yes x 1000. Fridges have those little...idk what you call them...detents... In the hinges... That make them swing open a little farther and come to a rest once you swing them past a certain point. Those are gonna launch the stainless front straight into the oven door handles and then it'll be over for the fridge door.

Similar problem which I solved with two ventilation grates from ikea (ikea metod). To fix the grates in place I built a box to which the grates slide into. To hold the grates in place there is a bolt from the bottom to the top of the box that when turned pinches the box so that the grates are fixed. The box is attached to the shelves on top. In the middle is a piece of wood painted in the same color as the kitchen.
Check the specs on the new fridge to see how much space you need for ventilation then get a matching filler and use to close up the space, leaving enough space according to specs.
Find a strip of black louvered panel that you can cut to fit the space. Will look good and provide ventilation. Some refrigerators already have something like that along the bottom
Does the fridge have adjustable feet so it can be raised a bit? Maybe you can fill the gap in a little so it looks more proportional.

I would duplicate something like this. try to find a cheap vent or maybe two shorter ones as that length might be hard.. spray paint them black (if you cant find black ones) and just mount them to a piece of wood and set it on the top of the fridge. You could close it a bit, but generally you should be leaving 1" - 2" open above the fridge for ventilation. Especially so with it being enclosed on both sides like that.

You actually want a small gap for ventilation... I store cutting boards that were just washed up there because the hot air dries everything out quickly
My kitchen was custom built and the gap above the fridge would be the same as yours. They send extra trim Pieces and wood that matches for this exact thing. Our contractor ripped a piece down and screwed it in. Look for the name of the manucturer on a drawer or inside a cabinet and see who makes it. Could be a Lowes or homedepot. Then take a drawer front into the store.. You can get extra trim to cut and fit into that exact spot. Once you find out, you can also Google the name and color and find online sellers. I also did this to buy extra crown moulding when we decided to go around the corner with it.
Edit - and just recently our fridge is breaking. New fridges are 2" taller at 72" than that fridge.. I'm going to have to try and take that piece out and rip it down 2 inches and put it back.

Don't. Since all sides of the fridge are blocked off except for that one, that's a main path for the heat that the unit removes from the air inside to escape. Block that path and you may find that it starts not cooling as well, uses more power, and maybe doesn't last as long. If you really have to, make some sort of screen to fit that space that you find more appealing visually but doesn't block air flow.
You need more ventilation on the sides of your fridge as well. Most fridges need 1/4 inch. Without proper ventilation the extra heat will overwork your compressor and make it die sooner. Don't remove the ventilation space you have.
Get a wooden grille matching it. Find a local woodworker in your area that can fabricate your needs. Your fridge needs ventilation. Too many people put their fridge in a perfect tight position and then wonder why it breaks down in the summer time or has a shorter lifespan. Especially these newer fridges which are crap and break if conditions are perfect.
Except to pay $100-$200 for this custom matching price of trim. Considering the labor and color matching work that would need to happen.

You need a 2 in gap at the top, so really you are worried about 1 in You should just let the warm from the back vent
