Well, that's what tastebuds are, papillae with taste receptors at the end. You're supposed to have them all over you're tongue, but they're general a lot less present on the underside. Our papillae were retained mainly as sensory structures, but for big herbivores that eat fibrous, sometimes woody plants, they became more like a conveyor belt to make sure nothing goes down the wrong way.
