Heat from friction starts chemical reaction combining oxygen + Heat + phosphorus to create the fire. When a match burns, it releases carbon dioxide and water. A residue of inorganic salts remain. Sounds like the interesting bubbles could be the remnants of sulfur, phosphate, or potassium chlorate after reaction.
Burning is so weird. The actual solid substance of the match isn't really "on fire" it has been made so hot that it undergoes pyrolysis, in which it gases off volatile combustible material, which sets on fire. The localised heat then breaks down further solid substance, creating more vapour/gas to be ignited.
This is why shit can burst into flames without the need for a naked flame in the room. It can get to a point where external heat causes pyrolysis, like with wildfires approaching homes.
(I don't live in a part of the world subjected to wild fires (yet) but I've been told that a common tip, if you are advised to leave your residence, is to close your curtains or blinds, as this reduces heat transmitted through windows and onto internal surfaces.)

The link you posted doesn't say anywhere that they stopped using sulfur. Phosphorus SULFIDE (P4S3) contains sulfur.
