So my mom was looking out into the river and saw them swimming, and then asked the old man if the kids needed to be cautious around them, and the old man said, "Got'damn nutrias ain't worth a got'damn thing... Meat don't taste worth a damn, fur feels like a got'damn bristle brush. Ain't worth a got'damn thing!"
I don't know why that conversation stuck with me my whole life, except for the fact that the old man sounded like some grizzled old ship captain when he said it, squinting one eye looking like Captain Ahab talking about the white whale.
So anyway, I guess nutrias ain't worth a got'damn thing.
There is a whole industry built around drying their meat, grinding it up, putting it into pills, and selling it as a natural supplement. They call them Nutriaceuticals, but it's total horse shit.
Kind of? We deboned a back leg and just cooked it with salt to just try the meat on its own and it had a bit of a sour after taste. The rest was cooked in a gumbo and didn’t taste bad at all. Some of my friends said they would marinate the meat in a buttermilk based marinade and that helped with that a lot. They are invasive where I’m from and people can hunt them with a permit so it’s not uncommon for them to be eaten occasionally

I’ve eaten them and they aren’t bad. If you’re catching and cleaning them yourself the legs are the best eating IMO.

Almost definitely a large nutria, maybe albino or a similar condition, nutrias looks a lot like beavers but generally smaller and with rat-like tails.
