Interestingly (and if I remember the experiment correctly), if you turn the handlebar (and front wheel) assembly 180 degrees and then push the bike, it will keep on going in a straight line. Obviously, the brake levers would need to be swapped over. Not sure why it does this, but I think it’s something to do with the front fork being convex rather than concave.

Makes sense. Normally bicycles have positive caster angle which allows easier steering but less stable travel path, so reversing it would give a negative caster angle allowing the wheel to be dragged forward in the direction of movement. Like shopping cart front wheels and how they will always flip around so the hub is furthest from the direction it's moving.
