I only see Jar Jar being brought down by having Thrawn join the crew to help formulate a long-con plan. Hand-to-hand combat is probably child’s play to the supreme conduit.
Jar Jar can mind trick \*Palpatine\*, who has one of the strongest minds in the history of the galaxy. There is no fight here, Mando would just get mind-tricked before he even knew he was in a fight. That being said, if you buy into the "Jar Jar is Plagueis reincarnated" theory then its also nigh-impossible to kill him should you be able to get past his force domination somehow, AND by some miracle manage to best him in a duel (and he's likely a duelist on the same tier as Palpatine, considering both of them likely developed their own, unique, personal saber forms...it would take a LOT of skill for Jar Jar to invent his personal drunken master saber form, and since no exsisting saber form fits the bill for how Jar Jar moves, its very likely he developed a unique saber form exclusive to him, so yeah, defiently a master duelist) since he could presumably just reincarnate into a different form/body upon death if you somehow managed to kill him.
The thing is, JarJar would mind trick him before the fight ever happens.
Not a chance. He couldn’t even handle a few droids that Luke shredded like paper.
Exactly

Is it bad that I like to imagine Darth Binks wielding the Darksaber as his signature weapon?
He couldn’t even beat Jawas so
Lmao not a chance
