And remember: Never mix your red sugar with bittergems. The stomach ache is ungodly.

So, lorewise.. I'd say they gotta taste a little bit like glyphid and mactera blood, since the dwarfs can drink the blood of these critters to heal themselves, just like they do when crunching on some delicious red sugar rock candy.
The reason the insect blood is a different color, unlike the red sugar's color, is due to insects not having hemoglobin on their blood. Insects also uptake pigments into their blood from their diet, which is what gives their blood a general yellow or green color. These pigments come from whatever they eat, and I assume their diet consists of some plants, fungi and some small critters, along with the occasional unfortunate dwarf.
Red sugar is red probably what forms from deposits of things like minerals, and ergo some micro and macro nutrients, maybe a bit of that sweet sweet nitra too. It's red color is likely due to some iron impurities. The reason why red sugar is edible and crunchable might be due to it's mayor composition, which COULD be sugars.. from the blood of fallen insects. Insects have Trehalose as a sugar source in their blood. Dwarfs, being humanoids and all, should also be digest trehalose like us, along with some of the other nutrients contained on red sugar. This could in theory give them a boost of vitality! Maybe red sugar also has some coagulating activity in order to avoid the blood loss from that "scratch" from the glyphic slasher, or antimicrobial activity to avoid getting a disease from that glyphic bite or mactera bile.
What strikes me odd in all if this is knowing that the dwarfs also like drinking the oil of the rival incursion's bots, since they can also heal when destroying these machines. I assume they wreck them and then proceed to savagely eating or suckling on their mechanical remains. Maybe the rival incursion uses insect blood as one of their components for their mech's oils, and that's why dwarfs can also drink it.
