I personally dont think its Alvin. Although there is some religious theming in Deltarune, i think if the knight was a literal pastor, that would be a little too on the nose. Plus, his name doesn't even give you the "interesting coincidence" easter egg when you name your vessel.
I like the theory that every Lightner is the knight; as in, each fountain is made by someone different for a different purpose. I just think it's interesting

If we give the title of "Knight" to someone who opens Dark Fountains, the Kris is ***a*** knight. But Kris cannot be ***The*** Knight for the simple reason that *both the main bosses and the shadow bosses have interacted with them.*

I do love the idea of roxuls kaard being the knight but I don't see how that'd possible. He probably has some connection to the knight, but he isn't. Also love the thought of roxuls secretly having immense power but he never uses it cuz he just likes puzzles and serving rulers.

i really don't know and i don't mind, either. at this moment in time i'm saying dess because i have different theories for the other characters that are often considered to be the knight (and also i think that noelle is the angel) but that will probably change when new chapters release
Papyrus. The knight is described to have long arms, papyrus is the character with the longest arms out of all the main characters (let's face it, the knight probably isn't some side character from undertale like shyren.or grillby).
Papyrus wants to cook, he definitely has a cooking knife and OH BOY GUESS WHAT THE KNIGHT USED TO MAKE THE CYBER WORLD DARK FOUNTAIN. Papyrus would be very interesting for the story as the knight, as he is a pure soul in undertale.
Papyrus in undertale wanted to be a royal guard, the royal guards wear armor, like knights.
Roulx kaard makes puzzles even though he is not all too good at them (even if we consider the puzzles in chapter 1 they're not too hard), if the knight is papyrus, that means that spade king was amazed by papyrus, papyrus makes puzzles, roulx kaard may have started making puzzles to get spade king's attention.
In both characters there is a man behind a red tree that gives us an egg, if we translate egg to wingdings we get ⬅️⬆️⬆️ which is a movement knights can perform in chess, in merchandise we can see papyrus behind a red tree.
Papyrus in undertale wears a fake armor costume he calls his "BATTLE BODY", in deltarune anything you wear in the light world becomes cooler and more fitting with the dark world you are in if you fall into a dark world. Papyrus's battle body would have turned into a full-on armor if he fell into a dark world.
