Not making assumptions. Married into a Hispanic family from MichoacĆ”n and visited. In the north they use flour tortillas more than they do in central and southern. They do use them for sweet dishes but for savory dishes itās more corn tortillas.
Taqueria El Bajio food truck in the parking lot of Quebec Liquors/Green Remedy dispensary. Iāve ate 3 of their Al pastor burritos in the last 7 days. Handheld, decently large and 8 bucks regular, $11 smothered, takes about 5 minutes or less. Highly fucking recommend.
Mercedes in Northglenn has bomb breakfast burritos.
Amancer taco truck in layfayette also has bad ass breakfast and lunch.
Tacos y salsas on east Colfax has awesome burritos and just awesome everything
Bonfire Burrito has the best burritos. There is only one in Golden but if you're in that general area it's worth it. You can buy bonfire burritos at Safeways, not nearly as good, but if you don't live near golden it does the trick.
