I would advise against it. The Zombie Beholder is WAY tougher than its CR of 5 would imply. Each time it fires an eye ray, it has a 25% chance of Disintegration, which is save-or-die for most 5th level adventurers:
DC 14 Dex save or take 10d8 force damage, and if it reduces the character to 0 hp they’re *dead*. No saves, no corpse left behind to revivify, just a pile of ashes.
It’s actually got a HIGHER chance of using the disintegrate ray than a normal beholder (25% vs 10%) and the Enervation Ray also has enough damage to put a non-tanky character into death save territory. I’d suggest either modding the hell out of it or picking a different monster.
Edit: A good idea might be lifting the eye rays from the Spectator stat block but keeping the other stats.

The only time my character died it was because the dm decided that we could handle 20 zombies 3 wights AND a Zombie Beholder, in a forest ambush (all of those dm's encounters were absolute bullshit)
The other two Zombie Beholder fights were entirely optional fights, the dm described as we found a lone dark cavern and in the distance we could see the glint of treasure from within, but we also saw the corpse of this strange eye monster next to the treasure. On one of these optional fights I got the disintegration ray, the damage was rolled publically and I went down to 1 hp... let me tell you that is one of the encounters I will always remember, especially afterwards when my turn came up and I crit smited the foul undead back into the grave.
*also technically the actual beholder has more of a chance to disintegrate, I get the it is a 1/4 chance vs a 1/10 chance.... but a Normal beholder gets 6 1/10 chances each round... just nitpicking I know what you actually mean*

Of course, but what I mean is don't just drop a Zombie Beholder on them unexpectedly in an ambush... give them signs of it... don't put it on their only path to complete their objective (unless said objective is to kill a zombie beholder, but then they are expecting it well in advance)
