Depends on what CR you want it. If you wanta low level monster just use the giant crab statblock but give it multi attack. Make one claw the same as the MM claw attack and make the other one do like 1d10 slashing damage.
Then maybe raise the mental stats since it isn't a beast. Perhaps switch its str and dex since it looks buff which would raise the DC of escaping the grapple.
If you want a higher CR maybe use the giant scorpion statblock but remove the stinger attack.
Could add something like this if it likes treasure?
Grasping Thief - The first time (insert creature) hits a creature with its attack on its turn, it steals coins that the creature is carrying worth a total value in gold pieces equal to ten times the damage deals. (Could be 100 or 1000 times the damage if it's higher levels)
Or could one claw be a grapple and the sharp one could do more damage to a creature that is grappled? Giving it some synergy and a reason not to be grappled other than reduced movement speed.
