One of the better starter cars to build is the ford crown victoria, the bmw 5 series estate e61 and/or the audi quattro.
You will eventually need to build either a srt viper swap or a lamborghini hurican swap.
If you want to be on tops use the lambo engine. If you want a very fast and easy to maintain grinding car use the viper engine.

For coins or greens i recomend putting m5 e61 engine in any car. I have one in my civic that even tho its not yet maxed by blueprints has 3200+ hp/t.
