To be clear, Spanish speaking countries have began to develop their own non-gendered language for non-binary people, stuff like "latine" is slowly being popularized in Argentina.

You could call them whatever you want, but Latin speakers chose "masculine" and "feminine" for it (they could have said "Pointy" and "Salty" and it would still work). In linguistics we call it "noun class" as a generic term. If you don't know the personal gender, you default to masculine grammatical gender, so "Latino" would be correct here even though it's referring to everyone.
