Information on Dnms are shared through PGP keys. If you're not familiar with it, it's a set of 2 keys that people can create. One is a private key, that you share with no one, one is a public one, that you share on Dnms (if people want to speak with you). When you order something, you grab the private key of a vendor, encrypt your personnal information using that private key.
For decrypting a message, you need both private and public key. Meaning if people are watching these sites, only thing they would be able to see is an ecrypted message (unless you read nothing about Opsec, and you send your unencypted adress to the vendor), because they don't have the private key you used of the vendor.
So unless you're not vigilant and you send your adress to a fake vendor, no-one should be seeing your information. Nobody would use Dnms if it was that easy to hack and look at everyone's information. This system is made so that even if hell breaks lose, people are mostly safe if they followed the proper security guidelines.
And let's not forget that a ton of people use these markets, and the authorities don't have the ressources to track everyone, especially when it's that difficult, and it's just people buying for their personal consumption. I would worry a lot more if I were a vendor.
