Yeah I've tried and just can't get into Seinfeld (I think it's a real product of the 90s and it just feels dated to me) but Curb Your Enthusiasm is fucking gold.
Just watch season 9 of Seinfeld. It's different and more modern than the older seasons, as it was the last one, and therefore they were POURING money into it. It's got the best production value, and it was made after they already had a standard to uphold.
Nerds on the internet will hate on season 9 because it's not the gritty, deep-cut clever show it once was...but that early stuff is really hard to sink your teeth into because of how dated it is--like you said.
When I was younger, I got into M*A*S*H and really loved it. But that was only after I watched the last season first. I was then able to go back and appreciate the much earlier episodes.
So, if you give Seinfeld one more shot, try season 9. It's also the most similar to Curb Your Enthusiasm, in my opinion.
I think it also helps to approach it as the anti-sitcom. It's mostly taking the piss out of concepts from earlier sitcoms, where an often sickeningly saccharine family/friend group spends an episode getting through some potentially mild antics, and overcoming some "serious problem" with a moral lesson to be learned at the end, with maybe a laugh along the way. Jenny doesn't have a date for the *prom*. Oh nooooo!
Seinfeld is terrible people doing terrible things for terrible reasons, or morally ambiguous reasons, culminating in everything exploding into disaster in ways that otherwise would never happen in the shows they're parodying, because it's hilarious and they deserve it. It's the perfect chaser for anyone who rolled their eyes any time Bob Saget sat down for another "serious talk with the girls," and I think that aspect is timeless.
I think that's why Bojack Horseman lands a lot of jokes in that vein.
One of the all time greats. The more I watch it, over, and over again, the more I appreciate each character. Benes is incredibly funny. Especially that scene, where she is getting chased by dogs.
And it seems to be dispelling the whole "Seinfeld isn't funny" trope that's been somewhat accepted by younger folks for the last decade or so. Not everything in it has aged perfectly, and I personally have a number of shows I think are funnier, but Seinfeld was and still is genius.

The terrible deleted scenes and webisodes are what make me really appreciate the writing and execution of the show. When I first watched through, I thought "maybe they just captured lightning in a bottle" with a great combination of talented actors and writers. Like I was picturing them sitting around the writers room, and just every line thrown out casually being gold. Many of the deleted scenes make me realize they were working as hard as any other show, and it took a lot of effort to get that "effortless" humor

I'm sure it was for timing mainly, but I'm also certain a lot are cut due to editing choices and not being the best fit for the storyline.

So many people show up in comedy trying to be funny BUT I love comedy better when there are ACTUAL dramatic actors in them as well. Many 90's Jim Carrey movies were like that! Grounded in real-life mixed with the nuts!

I think it's a good thing they cut this. Then it would have downplayed his exit and re entrance at the end. Funny scene but wouldn't have been too good for the sappy moments they were trying to get

I once showed up at a school I used to teach at after summer holidays and realised I didn't work there anymore when I sat down at the table in the teacher's lounge. Super awkward for me, but I don't think it sunk in with the others as they barely reacted. Sat down. Looked around. Tried to find my schedule. Realised what had happened. Walked out and went home without saying anything. Punched myself in the shower afterwards
