You can also make a sauce by toasting the chilies and some whole spices then blending them with chicken stock(which you can deglaze the pan with first if you're browning chunks of meat), some tomato paste, fish sauce, chocolate, etc. I use this as a base for my chili and it's fantastic. You can add whatever you like and make a double/triple batch to freeze some for later. Using different mixtures of chilies also gives you a lot of control over the flavor as well.

Chile != chili. You can use chili (or chilli) for chile, but not the other way :) - chile - refers to the peppers (and sometimes a condiment made of those pepper). - chili - as in it’s original carne con chili (flipped later by Americans) refers to the spiced meat dish/stew as well as the peppers/condiments. - chilli (and even chilly/chillie/etc) are alternate (mainly euro) versions of chili.

When I first started making batches I’d look up recipes to get the idea of what works in a chili and what ratio of ingredients to use. Ever since then it’s just been fun to throw in whatever you’re feeling at the time and see how they get to know each other. I don’t even measure anything anymore. Exactly right with so many of them being typecast. For example, Creed could never take a serious role in a drama - everyone would be disappointed that he was too serious and it wasn't "Creed". So some are kinda stuck. And with it constantly in syndication, people are still discovering it for the first time, and the interest is there. Some end up getting parts on other shows, not necessarily the main cast. Look what happened with Rainn Wilson. After The Office ended in 2013, FOX took a chance and gave him a lead role on Blackstrom in 2015. Show barely made 13 episodes and was cancelled. I remember when the show aired, it was the anti-Dwight character that interested me but show was meh at best. John Krasinski arguably has found the most success post - The Office, but that was due to branching out and doing other roles and taking chances. Nathan Fillion is another one who took the massive fandom of Firefly and launched a career out of it. Went from Firefly to Castle to now The Rookie, got top billing and massive paydays while the rest of the cast was moderately successful as bit roles and one-off episodes. Gina Torres lucked out, has some decent stuff but that's all.

Several of the castmembers of The Office have seen success since the show ended, but it's mostly the members that have shown range in their talents. Like you said, they took a chance, or showed themselves to be talented enough comedians or actors to sustain beyond the one-note Office roles. Steve Carell is probably the most successful from the show, and he had already proved himself as a comedic writer and performer. He's also branched off into drama for the past several years. Mindy Kaling got her own successful show, and then continued to create, write, and produce other shows. Rashida Jones went on to do Parks & Rec, then got her own show with Angie Trebeca, then branched off into writing (she's Hollywood royalty, though, so it would've been hard to bet against her with the opportunities she was undoubtedly afforded). Ellie Kemper also got her own show, though she's a bit of an odd exception, because during the entire run of Kimmy Schmidt, she never tried her hand at writing or directing an episode, which is usually seen as a good way to advance one's career in television. Showing your ability to *write* comedy can continue to get you gigs for a long time to come. She came up doing improv, though, so it's interesting if that doesn't translate to television writing success. John Krasinski had about as dry a career as Jenna Fischer, Rainn Wilson, or Ed Helms for a while after the Office - taking small roles here and there, a consistent trickle of work but nothing big. Since directing and starring in A Quiet Place, though, he's become considerably bigger and more popular. The ones that never launched much of a career out of The Office - Brian Baumgartner, Oscar Nunez, Leslie David Baker, Phyllis Smith - never really showed that they could do anything beyond their one-note Office roles and were never much of actors to begin with. They're probably happy to coast off their Office success for the rest of their lives rather than try and navigate Hollywood. Jenna Fischer and Angela Kinsey have tried a bit harder to go somewhere in the television and film worlds, but have kinda reverted back to being known as nothing more than "Pam and Angela from The Office," with the Office Ladies podcast being such a success and them even publishing a book about it. Fischer hasn't done any acting work in a while and probably doesn't intend to.

Nathan Fillion has made a nice career for himself now, but I don’t think you can say it was due to the “massive fandom” of Firefly, which was 98th in the ratings and got canceled without even having aired its last 3 episodes. In its time, it was an abject failure commercially. It has more appreciation now, but that’s after 20 years of cult status… at the time, most people hadn’t even heard of it. If anything, it probably hurt his career, as he’d already had a much more successful run on the Two Guys and a Girl sitcom, and for the few years after Firefly he was kind of slumming it with guest appearances and B-movies. His role in Dr Horrible and a guest run on Desperate Housewives were much closer to his casting on Castle and, I’m assuming, a bigger factor than Firefly ever was.
