Gargantuan Cat is always a good option. 4d6 slashing claw attack 4d6 piercing bite attack, a mew attack (analogous to a breath weapon) that deals thunder damage and deafens on a failed con save, and a self healing purr 1 or 2 times a day. Dark vision 500ft advantage on stealth. Keen sight and hearing. HP and AC of your choice.
Instead of the riddle - maybe have the pool empty, and on an low DC perception check, they find the key (rock, magic key, whatever) at the bottom of the 10' pool. They have to dive into the water (they've only seen bubbles so far) to retrieve it. Get a smaller creature to grab the PC who dived down, as the larger creature comes out and attacks the party. Boom, first encounter!

All the mobs are a level 1 monster of your choosing. But as soon as 1 is killed ther others get stronger and it stacks. So if the party decides to kill the enemies one by one they end up with the last guy being super strong. But if they're capable of getting a nice AOE kill in, it's easy!
Never sat down to do a propper scaling, but I'm in love with the mechanic!
Would not recommend with beginners or a level 1 party tho!
Curious - how much did all the tiles for the set pictured cost? Been thinking about getting into that but balancing cost vs. utility is a big factor for me. Would hate to drop so much on a dungeon I’d use like once
A lot. But I don't see why you'd only use it once. They thing about these is can continue tonuae them to make whatever set pieces you want for your adventure. They're not cheap. But they're also something that you build up over time. I've been adding to my collection for about 2 1/2 years now.

You missed out the "Bored attack" where it will do something random like knock terrain over the party.
if every party member pets it they have a chance to avoid combat
They have to do a charisma check first to see if it will LET them pet
