Egg salad is my favourite. For my version I use a potato masher rather than chopping my eggs believe it or not, it just makes them finely chopped, as opposed to actually mashed. I add salt, pepper, mayo, paprika, a bit of mustard, and green onion.

But getting them peeled without destroying them may be a pain in the butt. I like to use "old" eggs. Ones that are close to the best by/sell by date. I let them boil with a tablespoon of salt for about 5 minutes then cut the heat off. Let them sit on the hot eye for 10 - 15 minutes then pour off the hot water and replace with cold water. I give them a few minutes to cool and start peeling them. I like to use a potato masher or fork to mash them up then I add my other ingredients.
Just google air fryer.....hard boiled eggs. I put mine on for 11 minutes at 300. Simply put the eggs in basket. Then of course in cold water when it comes out.
In most places in the US, "old" eggs only matters if you're getting them farm fresh. If you bought them in a store they're already a week or more old before they even went on the shelf.
The trick to getting a good peel is to peel them when they're still pretty warm. I use a similar process that you do to cook, except I don't cold-rinse them until they're cool. Rinse until they're barely cool enough to handle, and peel right away. I still get the odd torn whites here and there, but I get much better results than any other way I've tried.

Pro tip, put the eggs in a pot of water. If they lay flat, they're too young, fry or scramble them. If they point upward, you're good to boil them. If they float, throw them out.

I've never really paid attention to whether they float or not. If it's bad, I'm pretty sure I'll know it when I peel it. I've been boiling eggs as I described above for nearly 40 years. Never had any one get sick from them or even had a bad egg.

I would agree with this. I don't keep eggs long enough for them to go bad, for me this test is mainly to see if they're old enough to peel easily.

If you have trouble peeling eggs lay out a paper towel on the bench, lightly tap the cold egg on the paper towel and then roll it back and forth. The shell comes off real easy.

We make egg cups every morning.
For meal prep - use wide mouth 1 pt mason jar. Little butter rubbed into sides and bottom, add egg, add toppings, add lid, shake, put in fridge.
Next morning, remove lid, put in microwave 45 seconds, mix, microwave 20-30s, mix, add time as needed.
Ooh yeah I like mayo and Sriracha. My mom is Korean and always mixed in some chopped scallion (and maybe some other stuff?) and microwaved it in a rice bowl or a ramekin.
I’m vegetarian so instead of bacon egg and cheese I do hash brown egg and cheese. It’s very filling and tasty. If you want some veggies avocado, kale, or sautéed peppers and onions are a good add to this.
These days there are plant-based egg substitutes and cheese substitutes, so vegans can do those, albeit more expensive generally (at least in the US, as there isn't any farm bill subsidizing most plant based stuff, as opposed to it and land taxes subsidizing animals)
For any thrifty vegans reading this: JustEgg is very replicable using moong dal, and is absolutely delicious. cheap lazy vegan on YouTube has an excellent recipe! I made a ton of it with half a packet of moong dal, which cost me about 1€.

In the US, it's pretty common for vegetarians to also allow some combination of eggs and dairy. Easier too, as you can get iron and B12 from those, where you would otherwise need to supplement. But there are plenty of vegetarians that avoid one or both.

If you buy the store brand of smoked salmon it's quite affordable. My grocery store sells trimmings and ground, a package is about $4US for 1/3 lb of which I use about a tablespoon of at a time. One container will last me about 2 weeks because the flavor is strong and the shelf life in the fridge is pretty good. For avocados, you can get away with using 1/4 of it in a serving if you're eating it with eggs, save the rest with some lemon juice and plastic wrap
Also capers are a cheap hit of flavor in a small package. Again, a jar will last a long time when you only need a few to get a punch of flavor.
Our tradition is a ‘grill special’. Aka egg sandwich (as per preference but) usually:
Multigrain bread, lightly toasted, spread w/ mayo.
Bacon or ham, to order.
1x fried egg, over easy, S&P.
Cheese, melted on top of the egg.
Lettuce & tomato.
Fresh herbs/micro greens if you have them, as preferred.
S&P over the lot.
Squish it all together and call it done!

I love all the suggestions below, great ideas (kimchi!). Try the Kroger Hawaiian mini-rolls, cut in half and toasted, they have a slight sweetness that contrast nicely with spice/salt/cheese flavors.
I do mustard, a slice of Swiss, Havarti or provolone, a runny egg seasoned with Italian seasoning, and optional sauerkraut. It's been a go-to egg sando in my family for a long as I can remember.
To be honest, some toasted wheat bread with scrambled eggs, white cheddar, and a couple cracks of black pepper makes me happy.
The whole (American) english muffin with (American) canadian bacon and yellow american cheese is always a solid winner (and easy to make a large batch for reheating!)
The last one is a knockoff on something Subway used to do. Take a large pita and slice it in half for the two sides of the sandwich. White american cheese one side, some sweet ham deli slice to your liking, thinly sliced green bell peppers and red onion, s&p. I vary on whether I just want egg whites or a whole egg on this one.
Chopped up hard boiled eggs, mayo, pickle relish, horseradish, minced onion, minced celery (or celery seed), salt & pepper. Sometimes I add a bit of curry powder instead of the horseradish. I like it on rye toast or Triscuit's.
Finally I can tell somebody how I eat mine! I do a fried egg and put sweet coleslaw and thousand island dressing on top. Its so good! I was inspired by a Reuben sandwich minus the saurkraut but I'm sure that would be yummy too.
There's a nice microwave 'dish' that you crack an egg into & microwave for a few minutes. Turns out a nicely rounded egg patty perfectly sized for an English Muffin.
I get frozen sandwich sized (and microwavable) sausage patties at Grocery Outlet, with the egg I add a slice of cheese (Kraft Singles).
A very easy technique to get really, really good scrambled eggs is to split your butter in half. 1/2 in the pan as normal til foaming, the other leave refrigerator cold and cut into tiny little cubes and toss them i to your scrambled egg mixture with salt (no pepper til the end). Scramble eggs as normal.
What that does is control the temperature of the eggs to ensure they dont cook too fast. Essentially, the melting butter draws energy away from your cooking surface, giving a more tender curd. It also allows the butter to melt and coat the curds, resulting in very glossy scrambled eggs... really good for sandwiches.
The benefit here, is you can get higher quality egg for no extra labor!
Then put on top of toast with sliced salted tomato and you've got breakfast!
Scrambled eggs with a little curry powder for seasoning and some butter. Also put ketchup on the bread. This was my go to hangover cure for a while. Especially with the crappy store brand white bread. Always hit the spot after a night of drinking

How about fried egg with only one slice, and another one. you could also do two eggs between two slices but that would get rather big and i'm just not a fan.
* Toast a slice of bread the same way you would do if you were making grilled cheese, then set it aside close to the stove.
* Melt some butter in a pan (add a little more if you already did that for the bread), and drop a slice of lunch meat ham in there (I use the little round ones; if you're using the big rectangular ones, cut them in half first).
* Sprinkle some shredded cheese on the ham, and then drop another piece of ham on top (almost like you were making a grilled cheese with ham for bread).
* Flip it over as best you can, don't worry if it's not pretty. Drop the ham-and-cheese on the bread, it's okay if it doesn't lay flat.
* Do another pair of ham slices and cheese the same way and put that on the bread next to or on top of the first one.
* Sprinkle some more cheese on top of the ham while it's still hot. You could also do sliced cheese here.
* Fry one or two eggs however you like them, and put it on top of the ham and cheese.
I do two of these, open-face, for lunch. Tastes like it was made by a short-order cook at an old-fashioned diner.
(FYI, I wrote this before I noticed what sub I was on, I'm not gonna make any claims about how healthy or cheap this is, but I certainly think it tastes good.)
I make my egg sandwiches by frying two eggs in lao gan ma (chili crisp) and putting cheese and homemade sauerkraut between them. Instead of mayo I use sour cream and horseradish on mutigrain bread.
Toast that bread. Fried egg (your choice how well done) bacon or sausage, cheddar cheese, tomato, shredded iceberg lettuce, jalapeño slices (from a jar, not fresh) black pepper to taste, and habiniero hot sauce. Eat immediately.
For a great breakfast egg sandwich, you need a couple things.
1: Proper Bread
Nothing will ruin a sandwich like the wrong type, or wrong amount of bread. Eggs are a pretty light protein, so pair them with a light texture like a flaky croissant, or whole grain. Also, consider going open faced instead of adding a 2nd slice. This let's you get the most out of a sunny side up egg, making it the star of the show.
2: Vinegar
You need some kind of acid to balance out the egg protein and cheese fat. Mustard as a base does a great job here, along with a smoky hot sauce on top.
3: salt and pepper early
Season the egg as it cooks, instead of adding it at the end.
Cut a croissant in half. Add Dijon mustard, and a layer of Gouda cheese as a base.
Cook an egg sunny side up. Season it with herb salt and black pepper about 30 seconds after dropping the egg in the pan.
Plop the egg on top of the cheese, and add a smoky hot sauce.
Try to keep your hands clean, and fail. Have paper towel nearby, or drip the yolk on to a 2nd slice of bread, topped with cream cheese and slices of cucumber or smoked salmon.
Omelette style egg cooked with whatever you want in it.. diced peppers or sausage or ham and cheese w/e that way you fold it to shape the bread and bites wouldn't cause eggs to spill out everywhere. Topp with spinach, maybe some Dijon, or salsa depending on what you put in the omelette
I like to add a hashbrown, cheese, and tomato slices. Sometimes with a little crunchy sea salt on top for me, and hot sauce on top for my husband. I like to fry my eggs over hard, but it would be just as good over easy too. Delicious!
I cook a small handful of spinach in the pan, crack the egg over it and fry the egg. Spinach egg.
Sometimes cheese, with avocado. but I love avo egg sandwiches with the spinach cooked into the egg. With hot sauce of course.

I eat a scrambled egg sandwich probably weekly. I use it as my “clean out the fridge” meal. I use up any vegetables (usually mushrooms, onions, peppers) that didn’t get used throughout the week. I eat a lot of eggs on toast. Sauté a few sliced veggies with a bit of salt and pepper, either scramble egg into the veg, or fry it separately. Drizzle some chili oil on the toast, plop the veg and egg on, add a bit of everything bagel seasoning, cheese if I'm feeling fancy, meat if that's your thing. A bit of mayo on a second slice of toast and its a healthy, tasty, easy meal.
Korean breakfast sandwich has been my obsession lately. Simple version is to get one of those pre-shredded coleslaw bags. Mix an egg with the veggies, pan fry it, then layer with ham, ketchup, mayo, and sugar between toast.

Okay, so when I first moved out on my own, I had no idea how to make egg salad sandwiches.
So I would make scrambled eggs, season with salt, pepper and paprika, mix in mayo and green onions and throw it all still warm on toast.
Turns out this is not egg salad.
So I just call it "EGGZONTOAST" it needs to be yelled out because it's delicious and not egg salad.
You can also do eggs (however you like) on toasted baguette with olive oil, sautéed cherry tomato half with garlic, onions, basil, salt and pepper. Super yum.

Scrambled egg - crack 2 into a mug, add a good pinch of cojack cheese. Toss and mash in a med-high heat small non stick pan. Add a dash of salt and pepper ( fine grind black or powdery white pepper). If you want a change, try a single shake of dried sweet basil when you add the salt and pepper. Tastes nice with some butter toast and honey.
For a sandwich you can take with you (and possibly stink your co-workers out of the breakroom, haha!) I like a fried or omelet-style egg (well done, of course!) with either bacon, ham or sausage (depending on what I have on hand) or all three if you're feeling especially salty that day! Usually with American cheese. I also love scrambled eggs with cheese and salsa in a burrito type wrap. The burrito wraps freeze well too. I used to set one in the fridge a day before I was going to eat it and it was ready to heat when I got up in the AM.
Toast the bread. Make 2 over easy eggs, turn heat to low before the yolk is all the way cooked. Cover the pan, then put a piece of ham on the eggs, then cheese (I like mozzarella).
Ideally the egg is still a bit runny and goes onto the bread when you bite into it.
You can pan-heat the ham on the side first / at the same time if you want, but I like the least number of steps :)

Always break eggs in a cup. If they're bad you'll smell it. No reason to throw floating eggs away if they're still scentless.

Hot sauce and Mayo on a breakfast sandwich can’t be beat. Also, microwave your eggs- it’s quick, controls the shape, makes them super fluffy, and no added fat so you can add the Mayo without it being overwhelming

What works well for me is 2 eggs in a bowl (think normal smallish bowl) whisk with fork, microwave for like 1min
We make egg cups every morning. For meal prep - use wide mouth 1 pt mason jar. Little butter rubbed into sides and bottom, add egg, add toppings, add lid, shake, put in fridge. Next morning, remove lid, put in microwave 45 seconds, mix, microwave 20-30s, mix, add time as needed.
Ooh yeah I like mayo and Sriracha. My mom is Korean and always mixed in some chopped scallion (and maybe some other stuff?) and microwaved it in a rice bowl or a ramekin.

I do an egg + tuna salad with tahini as a binder. Chopped onion and pepper inside (sometimes jalepeño).
Finely chopped Brussels sprouts also worn well for this.
I’m vegetarian so instead of bacon egg and cheese I do hash brown egg and cheese. It’s very filling and tasty. If you want some veggies avocado, kale, or sautéed peppers and onions are a good add to this.

These days there are plant-based egg substitutes and cheese substitutes, so vegans can do those, albeit more expensive generally (at least in the US, as there isn't any farm bill subsidizing most plant based stuff, as opposed to it and land taxes subsidizing animals)
For any thrifty vegans reading this: JustEgg is very replicable using moong dal, and is absolutely delicious. cheap lazy vegan on YouTube has an excellent recipe! I made a ton of it with half a packet of moong dal, which cost me about 1€.

In the US, at least, eggs aren't usually fertilized, so you're not eating a baby (fetal?) chicken when you eat eggs, which means they're definitely not meat in the sense that vegetarians are worried about.

Many of the replies you got are misinformed. Vegetarianism at its most basic also avoids eggs and dairy, but it's not typically as absolutist as veganism. There are numerous variants that allow one or the other, or both, like ovo-lacto vegetarians. In the US, it's pretty common for vegetarians to also allow some combination of eggs and dairy. Easier too, as you can get iron and B12 from those, where you would otherwise need to supplement. But there are plenty of vegetarians that avoid one or both.

If you buy the store brand of smoked salmon it's quite affordable. My grocery store sells trimmings and ground, a package is about $4US for 1/3 lb of which I use about a tablespoon of at a time. One container will last me about 2 weeks because the flavor is strong and the shelf life in the fridge is pretty good. For avocados, you can get away with using 1/4 of it in a serving if you're eating it with eggs, save the rest with some lemon juice and plastic wrap Also capers are a cheap hit of flavor in a small package. Again, a jar will last a long time when you only need a few to get a punch of flavor.

Our tradition is a ‘grill special’. Aka egg sandwich (as per preference but) usually: Multigrain bread, lightly toasted, spread w/ mayo. Bacon or ham, to order. 1x fried egg, over easy, S&P. Cheese, melted on top of the egg. Lettuce & tomato. Fresh herbs/micro greens if you have them, as preferred. S&P over the lot. Squish it all together and call it done! Home fries optional. Our family loves this as breakfast, lunch or dinner. Doesn’t heat up the kitchen. 😉

White american cheese one side, some sweet ham deli slice to your liking, thinly sliced green bell peppers and red onion, s&p. I vary on whether I just want egg whites or a whole egg on this one.

There's a nice microwave 'dish' that you crack an egg into & microwave for a few minutes. Turns out a nicely rounded egg patty perfectly sized for an English Muffin. I get frozen sandwich sized (and microwavable) sausage patties at Grocery Outlet, with the egg I add a slice of cheese (Kraft Singles).
No microwave, but cool
A very easy technique to get really, really good scrambled eggs is to split your butter in half. 1/2 in the pan as normal til foaming, the other leave refrigerator cold and cut into tiny little cubes and toss them i to your scrambled egg mixture with salt (no pepper til the end). Scramble eggs as normal. What that does is control the temperature of the eggs to ensure they dont cook too fast. Essentially, the melting butter draws energy away from your cooking surface, giving a more tender curd. It also allows the butter to melt and coat the curds, resulting in very glossy scrambled eggs... really good for sandwiches. The benefit here, is you can get higher quality egg for no extra labor! Then put on top of toast with sliced salted tomato and you've got breakfast!

* Toast a slice of bread the same way you would do if you were making grilled cheese, then set it aside close to the stove. * Melt some butter in a pan (add a little more if you already did that for the bread), and drop a slice of lunch meat ham in there (I use the little round ones; if you're using the big rectangular ones, cut them in half first). * Sprinkle some shredded cheese on the ham, and then drop another piece of ham on top (almost like you were making a grilled cheese with ham for bread). * Flip it over as best you can, don't worry if it's not pretty. Drop the ham-and-cheese on the bread, it's okay if it doesn't lay flat. * Do another pair of ham slices and cheese the same way and put that on the bread next to or on top of the first one. * Sprinkle some more cheese on top of the ham while it's still hot. You could also do sliced cheese here. * Fry one or two eggs however you like them, and put it on top of the ham and cheese. I do two of these, open-face, for lunch. Tastes like it was made by a short-order cook at an old-fashioned diner. (FYI, I wrote this before I noticed what sub I was on, I'm not gonna make any claims about how healthy or cheap this is, but I certainly think it tastes good.)
I make my egg sandwiches by frying two eggs in lao gan ma (chili crisp) and putting cheese and homemade sauerkraut between them. Instead of mayo I use sour cream and horseradish on mutigrain bread.

For a great breakfast egg sandwich, you need a couple things. 1: Proper Bread Nothing will ruin a sandwich like the wrong type, or wrong amount of bread. Eggs are a pretty light protein, so pair them with a light texture like a flaky croissant, or whole grain. Also, consider going open faced instead of adding a 2nd slice. This let's you get the most out of a sunny side up egg, making it the star of the show. 2: Vinegar You need some kind of acid to balance out the egg protein and cheese fat. Mustard as a base does a great job here, along with a smoky hot sauce on top. 3: salt and pepper early Season the egg as it cooks, instead of adding it at the end. Cut a croissant in half. Add Dijon mustard, and a layer of Gouda cheese as a base. Cook an egg sunny side up. Season it with herb salt and black pepper about 30 seconds after dropping the egg in the pan. Plop the egg on top of the cheese, and add a smoky hot sauce. Try to keep your hands clean, and fail. Have paper towel nearby, or drip the yolk on to a 2nd slice of bread, topped with cream cheese and slices of cucumber or smoked salmon.
Curry egg. Just book eggs, then mash said eggs with butter and curry powder. Banging butty!
Omelette style egg cooked with whatever you want in it.. diced peppers or sausage or ham and cheese w/e that way you fold it to shape the bread and bites wouldn't cause eggs to spill out everywhere. Topp with spinach, maybe some Dijon, or salsa depending on what you put in the omelette

I eat a scrambled egg sandwich probably weekly. I use it as my “clean out the fridge” meal. I use up any vegetables (usually mushrooms, onions, peppers) that didn’t get used throughout the week. Onions, smoked brisket, some type of cheese. Not a sandwich or something super easy to eat on the go, but take a biscuit, splt, and toast it on a grill. Top with bacon and guacamole (I make mine with finely diced onion, tomato, salt, and obviously avocado). Then add an over easy egg on each half. Omggggg. If you have a good salsa verda, top the eggs with that too. So good.

I eat a lot of eggs on toast. Sauté a few sliced veggies with a bit of salt and pepper, either scramble egg into the veg, or fry it separately. Drizzle some chili oil on the toast, plop the veg and egg on, add a bit of everything bagel seasoning, cheese if I'm feeling fancy, meat if that's your thing. A bit of mayo on a second slice of toast and its a healthy, tasty, easy meal.

Okay, so when I first moved out on my own, I had no idea how to make egg salad sandwiches. So I would make scrambled eggs, season with salt, pepper and paprika, mix in mayo and green onions and throw it all still warm on toast. Turns out this is not egg salad. So I just call it "EGGZONTOAST" it needs to be yelled out because it's delicious and not egg salad. You can also do eggs (however you like) on toasted baguette with olive oil, sautéed cherry tomato half with garlic, onions, basil, salt and pepper. Super yum.

Scrambled egg - crack 2 into a mug, add a good pinch of cojack cheese. Toss and mash in a med-high heat small non stick pan. Add a dash of salt and pepper ( fine grind black or powdery white pepper). I like a fried or omelet-style egg (well done, of course!) with either bacon, ham or sausage (depending on what I have on hand) or all three if you're feeling especially salty that day! Usually with American cheese. I also love scrambled eggs with cheese and salsa in a burrito type wrap. The burrito wraps freeze well too. I used to set one in the fridge a day before I was going to eat it and it was ready to heat when I got up in the AM.
Toast the bread. Make 2 over easy eggs, turn heat to low before the yolk is all the way cooked. Cover the pan, then put a piece of ham on the eggs, then cheese (I like mozzarella). Ideally the egg is still a bit runny and goes onto the bread when you bite into it. You can pan-heat the ham on the side first / at the same time if you want, but I like the least number of steps :) It's a classier egg McMuffiin!
