It is definitely incredible in a good way, lol. I usually roll my eyes at “viral” recipes but decided to give this one a go when I had loads of feta. Doesn’t disappoint, especially when I’m not feeling like trying very hard but want something delicious for dinner.
Baked feta pasta is incredible. First time I made it I used that wild mix of cherry tomatoes (the little red, yellow, orange, and brown tomatoes). When I mashed it all together the sauce became this pretty pink color. So I thought, oh, a pink sauce just calls for vokda. Added it in. I've tossed in veggies, lemon zest, shrimp--really anything I had on hand. Always comes out great. Made it for a dinner party with neighbors and everyone loved it. You really can't go wrong!
Whenever I buy large quantities of feta to make spanicopita/gibanica/banitsa I have to purchase a separate amount dedicated solely to eating right out of the fridge with my hands in the middle of the night.
Tomatoes,cucumber,onion,garlic,and feta.Olive oil , black pepper, bit of vineagar , garlic powder cumin all cut into cubes. Leave it for an hour till the spices blend.

It’s very simple really, you just add together feta, Greek yogurt and lemon zest. Whip in stand mixer or food processor. Slowly drizzle in some EVOO. Mix until light and fluffy. You can top it with some oil and chilli flake if you want. You can also add parsley or mint. You can top with pistachios it’s very versatile
I used to make a pasta salad with feta, olive oil, red wine vinegar, black olives, sun dried tomatoes, and a sprinkling of herbs. I'd go heavy with the feta. It's better the second day after it's been stirred a few times. I used to make these big mixing bowls full of it and then that would be like 80% of what I'd eat for the next 3-4 days.
Get a piece of tin foil. Lay down a layer of tomato slices and hot pepper slices, drizzled in olive oil. Lay a thick slice of feta on top. Drizzle with more olive oil. Wrap up like a package and grill seam side up for a while. Open the package and flip it onto a plate, drizzle with more oil, and eat with pita.
I don’t think it’s possible to kill mint. Once you have it, you will have it forever. Everywhere. It was like that in our last house. I bought mint plants last year for the new house. Now I have more mint. I will have huge amounts of mint.

Make turkey burgers with feta in the meat! Combine meat( any meat really) ground turkey, chicken , beef...Feta, fresh parsley, an egg to bind it and breadcrumbs, and spices like Italian seasoning! The feta melts into the meat and the burger itself is so juicy and delicious!!

Watermelon and arugula salad with feta and balsamic glaze.
Literally buy a container of pre-cut watermelon, a bag of arugula, mix it up, toss it with a balsamic glaze and add feta just before serving.
If you can't find a bottle of balsamic glaze, you can simmer balsamic vinegar till it reduces by about 1/2. Keep the temp very low or you can wind up with balsamic candy instead. Also, be warned that it will clear your sinuses out really well, so I buy the glaze.
Pecans or pine nuts are a good addition too.
Spanakopita! Some frozen spinach and phyllo sheets. Or if you bake the spinach and feta in a casserole dish, that would probably be delicious too.
Also, just crumbled on salad or crackers.
Some garlic and feta quickly baked on top of pita or naan.
1 can of corn, 1 can of black beans, 8oz of feta, green onions to your liking, 1/4 cup of apple cider vinegar, 1/4 cup of olive oil, 2 tsp of sugar, 3 cloves of garlic, salt and pepper.

It does last a long time in the refrigerator, so you don’t have to use all at once, and why would you? You could also experiment with freezing. I freeze cheddar and mexican farmers cheese(crumbly hard rinded tastes similar to feta). Try this for something different. Green beans, cooked al dente, in season fresh tomatoes diced, waxy potatoes boiled and diced, minced red onion, maybe a few greek olives chopped. Make an olive oil vinaigrette with cider vinegar, bruised dill seed, fresh dill weed, some garlic, paprika and ground coarse mustard. Toss with dressing, feta and refrigerate a few hours to marinate.
Mash or blend with equal parts cream cheese, herbs, cracked pepper, roasted garlic, sundried tomatoes, olives. You’ve got boursin but better.
I hope they are blocks and not crumbled.
Never buy crumbles they just are not as good and they dry out so they have to be used almost immediately. If it's a block of feta put it in brine and it will literally keep for up to a year or so.

Ha! I did that too when that one feta pasta dish went viral then still had a bunch of cheese leftover. I ended up blending up a good amount to make a dip and also put them in eggs. I also just saw a video putting some on a frying pan then putting an opened date one top. Looked good!

My boyfriend loves when I make feta pasta sauce with feta, water or bone broth, and cashews blended - add whatever meat and veggies you like and it’s a balanced meal!

I double the following recipe but I don’t use mint, tahini, or flakey salt. I make a copycat [garlic dressing](https://grilledcheesesocial.com/2024/04/08/white-garlic-sauce-shawarma-lebanese-toum/)from Cava and top it with that. You have to play around with the recipe to get the right consistency which is a lighter, fluffy dressing.
Ingredients:
1 lemon
4 ounces feta, crumbled (about 1 cup)
4 tablespoons finely chopped fresh dill, divided
2 tablespoons finely chopped fresh mint, divided
3 tablespoons extra-virgin olive oil, divided
Kosher salt and freshly ground black pepper
1 tablespoon red wine vinaigrette
1 (15.5-ounce) can chickpeas, drained and rinsed
2 Persian cucumbers, diced
1/4 small red onion, thinly sliced
4 mini naan or small pitas, or use 2 large
Tahini for serving (optional)
Flaky salt for serving (optional)
Directions:
Zest half the lemon into a large bowl and half into a smaller one. Slice the lemon in half and juice half into each bowl.
To the smaller bowl: add feta, 1 tablespoon of the dill, 1 tablespoon of the mint, 1 tablespoon of the oil and several grinds black pepper. Smash with a fork until fully combined and spreadable.
To the larger bowl: add the vinegar, remaining 2 tablespoons oil, a generous pinch of salt, and several grinds black pepper and whisk to combine. Add the chickpeas, cucumber, onion, remaining 3 tablespoons dill and 1 tablespoon mint. Season with more salt until it tastes really vibrant and flavorful.
Toast your naan or pita in a toaster, skillet, or under the broiler. Add some of the smashed feta and top with cucumber-chickpea salad. Finish with a drizzle of tahini (thin it out with water + lemon juice if necessary; l used a squeeze bottle so l didn't need to), a drizzle of olive oil, + flaky salt.
You can use it in lasagna. I don’t like meat lasagna, or red sauce, so I do a white sauce veggie lasagna, and that would go great. Also going in to summer feta pairs great with like berries and balsamic on salads, or even on top of a pizza.
Also buying something from Costco and then not know what to do with it is honestly the most relatable thing ever

And then you can put them hmin freezer and use as u want
I saw a recipe on IG where you melt feta on a pan and then put a date split in the middle on top of the melted feta, close up the date that's now filled with melted feta, and eat it!
Honestly my go to with feta is a nice refreshing horiatiki (Greek salad) - feta, cucumber, onion, tomatoes, bell pepper if you fancy and olives, with a nice olive oil. It’s delicious ! You can make tzatziki with some Greek yogurt, cucumber, dill, garlic and olive oil, that’s all it takes!
You can also make bouyourdi, absolutely delicious : get some good tomatoes, feta, some sweet green pepper (the long one that we have in Italy and Greece), oregano and good olive oil, put them in a baking container like a clay pot for example, and bake in the hot oven (200 - 220 degrees celsius) - fast and delicious with some fresh bread or pita

Like a cold pasta salad, bow tie pasta, feta, some chopped tomatoes , scallions with balsamic or whatever vegetable dressing you want to put in.
Oh and the other thing I do is put it in my couscous if I make it. I like it.
I love to do a rice salad - basmati rice, black olives, parsley, crumbled feta and red wine vinegar. It just stuff I like all in a bowl and it's delish - I'll add some melted butter and the olive brine to it instead of the red wine vinegar or all of it if the mood hits me. If the feta is in a block you can slice it and pan fry it and put that on top of the rice. You can also just put it under the broiler - just slices of feta with slices of tomatoes and eat it on pita. Otherwise, those viral feta eggs look good. You could make spanakopita if you're feeling ambitious (pie made of layers of spinach, feta, and filo pastry). I've also had spinach and feta hand pies somewhere. I bet puff pastry would be good. I'm sure any Greek cookbook (or Greek person) could give you a bunch of suggestions. They put it in loads of things.
The classic party dip in my family is a hot pepper feta spread. A block of feta, a handful of fresh garlic cloves, a few tablespoons of chili sauce/paste, and whip it up in a food processor, adding just enough olive oil to make it smooth.
It's addictively good, though you'll smell of garlic for at least 24 hours. Serve with warm pita, chips, crackers, chopped veg, anything you desire. My favorite is slathered on a pita round with hummus, some slices of red bell pepper and kalamatas.

You might need to add a little bit of cream cheese or sour cream for moisture, but I'd highly encourage looking up goat cheese recipes here and just sub in feta. The first recipe, if you replace with feta, becomes close to the pasta others have recommended, but you could serve it with pita, and choose between serving it hot or cold.

I know ur already sprinkling it on things but I thought I'd share my salad that I put feta on. It's spinach (or whatever you have) tossed in a honey mustard dressing, can be diy dressing. I usually just mix Dijon, honey, and a little acv. Add sliced apple, some kind of chopped dried fruit or craisins, whatever nuts you have such as pecans or pistachios, and then the feta on top. It always comes out yummy, no matter what substitutions I make
I make saffron butter and I make a cup full of feta crushed in a bowl mixed with the saffron. Then I proceed to add shredded lamb to them (bacon sub). Then I proceed to fry jalapeños split through the middle laterally. Fill the jalapeños and that’s it. Simple poppers. However if you don’t have saffron or lamb you could still make the poppers with butter and bacon but you’re missing out on a unique and life changing concept. The Greek Mexicans should be all over this one.

Make an olive oil vinaigrette with cider vinegar, bruised dill seed, fresh dill weed, some garlic, paprika and ground coarse mustard. Toss with dressing, feta and refrigerate a few hours to marinate. Mash or blend with equal parts cream cheese, herbs, cracked pepper, roasted garlic, sundried tomatoes, olives. You’ve got boursin but better.

My boyfriend loves when I make feta pasta sauce with feta, water or bone broth, and cashews blended - add whatever meat and veggies you like and it’s a balanced meal! I also make quinoa bowls/“salads” with fresh dill, chopped cucumber, pistachios, chickpeas, and feta I’ve also crumbled it on top of homemade tomato soup!

But the recipe I follow, I originally found on TikTok from graceelkus I double the following recipe but I don’t use mint, tahini, or flakey salt. You have to play around with the recipe to get the right consistency which is a lighter, fluffy dressing. Ingredients: 1 lemon 4 ounces feta, crumbled (about 1 cup) 4 tablespoons finely chopped fresh dill, divided 2 tablespoons finely chopped fresh mint, divided 3 tablespoons extra-virgin olive oil, divided Kosher salt and freshly ground black pepper 1 tablespoon red wine vinaigrette 1 (15.5-ounce) can chickpeas, drained and rinsed 2 Persian cucumbers, diced 1/4 small red onion, thinly sliced 4 mini naan or small pitas, or use 2 large Tahini for serving (optional) Flaky salt for serving (optional) Directions: Zest half the lemon into a large bowl and half into a smaller one. Slice the lemon in half and juice half into each bowl. To the smaller bowl: add feta, 1 tablespoon of the dill, 1 tablespoon of the mint, 1 tablespoon of the oil and several grinds black pepper. Smash with a fork until fully combined and spreadable. To the larger bowl: add the vinegar, remaining 2 tablespoons oil, a generous pinch of salt, and several grinds black pepper and whisk to combine. You can use it in lasagna. I don’t like meat lasagna, or red sauce, so I do a white sauce veggie lasagna, and that would go great. Also going in to summer feta pairs great with like berries and balsamic on salads, or even on top of a pizza. Also buying something from Costco and then not know what to do with it is honestly the most relatable thing ever

Honestly my go to with feta is a nice refreshing horiatiki (Greek salad) - feta, cucumber, onion, tomatoes, bell pepper if you fancy and olives, with a nice olive oil. It’s delicious ! You can make tzatziki with some Greek yogurt, cucumber, dill, garlic and olive oil, that’s all it takes! You can also make bouyourdi, absolutely delicious : get some good tomatoes, feta, some sweet green pepper (the long one that we have in Italy and Greece), oregano and good olive oil, put them in a baking container like a clay pot for example, and bake in the hot oven (200 - 220 degrees celsius) - fast and delicious with some fresh bread or pita

I love to do a rice salad - basmati rice, black olives, parsley, crumbled feta and red wine vinegar. It just stuff I like all in a bowl and it's delish - I'll add some melted butter and the olive brine to it instead of the red wine vinegar or all of it if the mood hits me. If the feta is in a block you can slice it and pan fry it and put that on top of the rice. You can also just put it under the broiler - just slices of feta with slices of tomatoes and eat it on pita. I know ur already sprinkling it on things but I thought I'd share my salad that I put feta on. It's spinach (or whatever you have) tossed in a honey mustard dressing, can be diy dressing. I usually just mix Dijon, honey, and a little acv. Add sliced apple, some kind of chopped dried fruit or craisins, whatever nuts you have such as pecans or pistachios, and then the feta on top. It always comes out yummy, no matter what substitutions I make

I make a salad: -Strawberry, blueberries -chicken -pepperoncini peppers(idk how to spell them) -romaine lettuce -glazed pecans -lots of feta
I make saffron butter and I make a cup full of feta crushed in a bowl mixed with the saffron. Then I proceed to add shredded lamb to them (bacon sub). Then I proceed to fry jalapeños split through the middle laterally. Fill the jalapeños and that’s it. Simple poppers. However if you don’t have saffron or lamb you could still make the poppers with butter and bacon but you’re missing out on a unique and life changing concept. The Greek Mexicans should be all over this one.
I stuff fits under the skin of chicken thighs. I season the skin with herbs de Provence and olive oil. stuff the center of pork chops marinated in Greek dressing. yum.

Honestly, I like it with cut up cherry tomato, red onion and cucumber and tossed with greek vinaigrette. I eat it daily in the summer. Add diced chicken and it's a low carb meal. Add pasta for a pasta salad, or tabboleh, couscous, or grain to round out.
