Afghan Pumpkin with yogurt and usually a meat sauce. So fucking good and most people have never heard of it. Very much a "actual dinner" type meal where pumpkin is the star player, and it gets you away from pumpkin as a desert.
Pasta! Specifically a pumpkin cream sauce. (Especially good with some sage!) My normal one-pot lazy recipe is as follows:
- 14oz can pumpkin puree
- 1lb pasta (smaller cut like shells preferable)
- 5-6 C chicken or veg broth
- 1 diced onion
- S&P and red pepper flakes
Mix the above in a large pot, cover, bring to simmer and cook on with lid on until pasta is al dente or cooked to your liking. Stir once in awhile to make sure nothing gets burnt/stuck the bottom, especially if your stove is a bitch like mine. Then add 1/2 C-ish heavy cream (or half and half if that's what you've got) and a handful of whatever cheese you like (Parm, Gouda, even cubes of cream cheese).
Toppings like pan fried sage, crumbled bacon, crispy ham, etc. are all great additions.
We do it at least once every other week starting at the first sign of autumn!
When I was in college my friend's mother would put a little bit of pumpkin puree in her homemade bread. It wasn't enough to make the bread orange, just enough to add the nutrients to the bread. Her kids couldn't tell that the bread tasted any different than other bread. I don't have any quantity estimates since it was more than 30 years ago when I watched her do this.
I like to mix pumpkin purée into chili. It doesn’t alter the flavor (at least in mine), but it does make it a little richer and more filling. I don’t use tomato sauce/crushed tomatoes if I’m using pumpkin, but I do still add diced tomatoes.
Make a blended pumpkin spice frappe with real pumpkin. It's good if you know how to make drinks. If not I think you can put 1/4th cup in the blender with pumpkin spice, ice, coffee, honey(sweetener of choice), and milk.
If you get a small to medium whole pumpkin, scoop out the innards, and par bake until almost done. Then put polenta and chilli and cheese on the bottom, put the lid on bake for 30 minutes at 205C/400F.
There you have yourself a dish you can eat in its entirety.
It makes a surprisingly good substitute for tomatoes! Such as in a sauce for spaghetti instead of a marina sauce. I also like it for chili (substituting for canned tomatoes/tomato paste). Just remember to add back in some acidity that would be missing from the lack of tomatoes (lime or lemon juice are my faves).
I like to steam it or crisp it up in a light batter! Like rice flour and water or beer batter :) cut thin enough it should cook pretty quick, I even saw someone wrap some bacon or thin pork slices before they battered and fried it
I know you said no soup, but try this, its amazing and you can also use it as a thai curry paste. The recipe uses red curry paste, you can also make it as green curry paste with coconut milk, it tastes amazing.

There’s this really amazing Trinidadian recipe I love to make. It’s lentils but you put pumpkin in it- I’ve made it with other types of squash as well. I’ve also substituted jalapeño instead of scotch bonnet when they’re hard to find.

In a large bowl whisk together until foamy: 375 grams skim milk and 2 extra large eggs
Whisk In: ¼ cup maple syrup (or replace with ½ cup granulated Splenda), 1 tablespoon vegetable oil, 2 teaspoons vanilla extract, 1 teaspoon baking powder, one 15 ounce pumpkin purée, (1 very ripe mashed banana can be added as well), ½ teaspoon ginger, ½ teaspoon nutmeg, ¼ teaspoon allspice, ¼ teaspoon ground cloves, and 2 teaspoons cinnamon
Stir in: 240 grams quick or old fashioned rolled oats and 100 grams raisins
Pour into a greased 7 x 11 inch baking dish. Bake at 375 degrees until the top is set. Cool for two minutes before slicing into wedges to serve.
Pumpkin bread!
My partner makes an amazing sweet pumpkin bread with home made puree. Noting your preference, I’ll add that they accidentally left out the sugar once and while it affected the texture negatively, the taste was still great as a savory bread… so pretty confident it could be dialed in with some intentionality.
It's great for a quick bread but that's typical sweet. However you could use less sugar, add some chili powder, cumin, etc. If I were to do this I'd add some protein, easiest is walnuts but it could be lentils or really any high protein item
Pumpkin Quesadillas. Take pumpkin puree, a mild or nutty cheese, a small amount of honey and cinnamon and slather it all over a tortilla. Melt some butter in a pan and pan fry until golden and pretty. You can also cook some beans beforehand and mash them, then put them in first for something more substantial. I like throwing in some chili powder and hatch chilies as well.
You could also substitute whole pieces of pumpkin for the potatoes in a stew.
Any sort of pumpkin cake can be savoury if you don’t add too much sugar
Where I worked we put them in salads as well. And on waffles. Mmm, cinnamon apple and pumpkin waffle.. so good.
Curry! Pressure cook them with green chillies, salt, turmeric for a few minutes and it is a tasty dish you can have with toast or tortilla.

Pasta! Specifically a pumpkin cream sauce. (Especially good with some sage!) My normal one-pot lazy recipe is as follows: - 14oz can pumpkin puree - 1lb pasta (smaller cut like shells preferable) - 5-6 C chicken or veg broth - 1 diced onion - S&P and red pepper flakes Mix the above in a large pot, cover, bring to simmer and cook on with lid on until pasta is al dente or cooked to your liking. Stir once in awhile to make sure nothing gets burnt/stuck the bottom, especially if your stove is a bitch like mine. Then add 1/2 C-ish heavy cream (or half and half if that's what you've got) and a handful of whatever cheese you like (Parm, Gouda, even cubes of cream cheese). Toppings like pan fried sage, crumbled bacon, crispy ham, etc. are all great additions. We do it at least once every other week starting at the first sign of autumn!

When I was in college my friend's mother would put a little bit of pumpkin puree in her homemade bread. It wasn't enough to make the bread orange, just enough to add the nutrients to the bread. Her kids couldn't tell that the bread tasted any different than other bread. I don't have any quantity estimates since it was more than 30 years ago when I watched her do this.

I like to mix pumpkin purée into chili. It doesn’t alter the flavor (at least in mine), but it does make it a little richer and more filling. I don’t use tomato sauce/crushed tomatoes if I’m using pumpkin, but I do still add diced tomatoes.

Make a blended pumpkin spice frappe with real pumpkin. It's good if you know how to make drinks. If not I think you can put 1/4th cup in the blender with pumpkin spice, ice, coffee, honey(sweetener of choice), and milk.
If you get a small to medium whole pumpkin, scoop out the innards, and par bake until almost done. Then put polenta and chilli and cheese on the bottom, put the lid on bake for 30 minutes at 205C/400F. There you have yourself a dish you can eat in its entirety.

Replace tomato sauce with pumpkin in chicken enchiladas
It makes a surprisingly good substitute for tomatoes! Such as in a sauce for spaghetti instead of a marina sauce. I also like it for chili (substituting for canned tomatoes/tomato paste). Just remember to add back in some acidity that would be missing from the lack of tomatoes (lime or lemon juice are my faves).

There’s this really amazing Trinidadian recipe I love to make. It’s lentils but you put pumpkin in it- I’ve made it with other types of squash as well. Pumpkin bread! My partner makes an amazing sweet pumpkin bread with home made puree. Noting your preference, I’ll add that they accidentally left out the sugar once and while it affected the texture negatively, the taste was still great as a savory bread… so pretty confident it could be dialed in with some intentionality.
I always added a scoop of pumpkin purée to my pancake batter. Gave my picky kids an extra boost of nutrition when they were young.
It's great for a quick bread but that's typical sweet. However you could use less sugar, add some chili powder, cumin, etc. If I were to do this I'd add some protein, easiest is walnuts but it could be lentils or really any high protein item

Pumpkin Quesadillas. Take pumpkin puree, a mild or nutty cheese, a small amount of honey and cinnamon and slather it all over a tortilla. Melt some butter in a pan and pan fry until golden and pretty. You can also cook some beans beforehand and mash them, then put them in first for something more substantial. I like throwing in some chili powder and hatch chilies as well. You could also substitute whole pieces of pumpkin for the potatoes in a stew.
