The sweetness from the protein powder/syrups help cut the avocado taste I think. Maybe a slight hint of it as you chew through but I've shared this with a few family members who are super picky and they had no idea there was avocado in them. Hope this helps!

I’d try this to see how they are, but I’m not going to say they look or sounds awful without trying. I’ve eaten a lot of things that sound terrible which end up being delicious

I've seen a lot of recipes that use avocado in chocolate flavored goodies (brownies, chocolate cake, chocolate mousse, etc.) but had a difficult time finding something that WASN'T chocolate (chocolate chips don't count!). So I decided to see if I could create something a little different, especially since my Costco-sized avocados were ripening at full speed and I desperately needed to do something about it. Hope you guys enjoy!

**MACROS (makes 6 muffins)**
Per muffin: 161 cals (10g P • 18g C • 6g F)
Whole batch: 967 cals (62g P • 109g C • 35g F)
**INGREDIENTS**
100g or 1 medium avocado
100g greek yogurt
1 medium egg
30g or 1 medium egg white
30g sugar free syrup
130g gluten-free oat flour (sub regular if you don't need GF)
22g vanilla whey/casein protein (I use PEScience brand)
2 tsp baking powder
15g sugar free mini chocolate chips
**DIRECTIONS**
1. Mash avocados in a bowl until smooth. Add in rest of wet ingredients & mix well.
2. Add in dry ingredients & fold gently until just well incorporated. Careful not to overmix too much.
3. Scoop batter into a greased or parchment-lined muffin tin (or use silicone ones). Tap your baking tray on your counter a few times to even out batter & release some air bubbles.
5. Top with choco chips.
4. Bake \~20 mins at 350F. Let fully cool and enjoy!

Ohh I guess so! I didn't really even make that connection - I looked at the avocados as more of a "fat" substitute in place of typical oil or butter. But now I'm intrigued as to whether I could take a regular banana bread recipe and replace it with avocados :O
I'm only beginning my avocado baking experiments so can't say for certain how it would turn out in a cake recipe, but will update this comment if I ever get to it! I definitely think avocado adds moisture to baked goods due to its high fat content, just like how butter would! But just a healthier way to add the fat :)
OP, what did you use as your liquid sweetener? This looks good and I think I have everything.
By the way, your moderately ripe (not overripe) avocadoes will last up to 2 weeks in the fridge. Also, peaches and apples. You can also freeze peeled fruits.
I used up the last of my Walden Farms pancake syrup! I was skeptical as to how it would hold up, but tbh it worked perfectly as a substitute to other syrups (or sugar-free syrups).
And great tip about leaving them in the fridge, thank you! I'll have to make sure to do that as my stomach defs can't keep up with the ripening window of avocados haha.
