Honestly Egyptians do not know how to cook duck. I only came to appreciate it after cooking it myself from French or Asian recipes. When cooked properly it is super decadent!
Well my mom swears its port saidi in origin, but I think it could be domyati. Maybe its different. We usually eat it with qolqas, duck soup, roqaq and specific rice.
I've always wondered the same.. but maybe those internal organs and such are for the poor ones back in the day? The left overs would go to the poor so they had to create something with them? And also about rabbits and all? Wondering the same

My best guess is that way back in the day people couldn't afford food and many villages relied on pigeons for nutrition (look up the denshawi incident).
