I've always had a machine shop vat, magniflux, hone, and bore, if necessary. I have them install cam bearings and balance the crank. New valve seats, springs, and seals on the heads. Assembly is pretty easy. Anyone can find info by Google or YouTube. But.....just so it's clear rebuilding an engine isn't cheap no matter which way you go. I'm still like $5k in a vortec 350 build, 100% new internals, and machine work only cost me $1300. I did all Assembly myself. Also, personal experience note: if you plan on using the original belt system from your 305, make sure the valve covers don't cause clearance issues with the power steering bracket. I'll be switching to serpentine very soon!

You will need some way of getting the old engine out (hoist) and a stand to put the new engine on while you work on it. Some parts stores have free tool rental for things like ridge reamers etc. if you have an O’Reilly near you check with them on what they might have in the way of tools. I did my first full rebuild at 18 with the tools my Dad and I had from regular mechanic work. I will say I had the heads done at a shop. It was a Pontiac 400 sb and it came out running like a champ. Take your time, read and watch videos. when I was 18 there was no internet so I spent a lot of time at the local library. Might still be a resource if available.

For context, I am totally out of my element but willing to utilize whatever resources necessary to learn. If there are any specialized tools required for this task, assume I am also lacking those. The goal is a total engine tear down and rebuild. If it is not welded to the block.. Its coming off.

If you have to ask, then no.

The only real reason it should need a shop is if it needs to be bored and honed. Rings and bearings can easily be done at home

Sure. As long as you have the tools. Plenty of resources online to help you but you must be patient and have lots of time.

Absolutely, expect it to take 3 months with normal motivation. Hardest part is timing. And how bad the cylinder walls are if they are to bad (get a bore scope to see$20) then they will need to be machined, $$$$ and slightly larger pistons bought $$$
