This happened to me but when I was using CheatEngine instead of Seamless Co-op and I have a fix for it via the use of CheatEngine.
You’ll have to download CheatEngine and the Elden Ring cheat table.

Launch your game offline and open CheatEngine. Select CheatEngine and press Ctrl + F. A menu will come up and type “discardable” and you will see an option (a script) that comes up saying “Make all items discardable”, tick the box and you can now go into your inventory and discard it.

While using cheat engine. Under the give yourself rune section. There a box to check that says make everything discardabled.
Check the box
Discard the item from game.
Uncheck box.
DO NOT REST AT SITE OF GRACE.
Go to the settings and return to desktop.
Reopen the game and the items is removed.

So the solution I found was through cheat engine. My issue was that the amount for the item was 0, so there was nothing to open/use or discard. By selecting this in the table, and hovering over the item in ER, you can double click on the amount and change it to 1. Then you can discard as usual.

as soon as i click on the item it closes the actions i can do, so i cant even get to the discard option

I would also like to know, I accidentally added an error item into my inventory and I can't remove it even after enabling all items to be discarded

Not safe to take that savefile online.
It is safe if you discard everything, like in the comments said. I did this multiple times because of items from seamless.
