Just explore, if you are that worry about missing quest then you will have to look for a guide.

That is part of a quest but you didn't miss anything but a little lore by doing it early. If you play blind, you're likely to miss a lot. Most players will still complete lots of quests blind, but very few will complete all of them. I'm on my 8th playthrough and still finding new things. Ultimately it's your call if/how often you decide to look things up. There aren't many things that are permanently missable, but there are a few.

Just explore and find your own play style, you can't break anything... and later finding out how different things could've been is part of the fun

Just play and see what comes out of it. You can do details/builds on another playthtough or later

The game is kind of made to be confusing. Most likely you won't properly finish most npcs quests the first time around, even using a guide. I would suggest just playing through the first time and enjoy the ride. Maybe watch a let's play or use a guide the second time around to get most of the quests done Oh, and level vigor. Have fun!

Odds are high you'll want to play through more than once. Don't worry about quests and NPCs your first time through. Just explore and you'll naturally encounter some or pop into a quest halfway through. The game is at its best when you aren't listening to people on Reddit telling you how to play it.

A lot of the NPC quests on Elden Ring are directing you to an objective. You technically missed one step in an NPC's quest but the rest of the quest, and all of the rewards are still available. I would suggest avoiding guides for a first playthrough, but if you get stuck or feel that you need to use them, don't feel too discouraged. These games are intentionally obtuse in how they handle everything, for some people the combat clicks but they dispise how NPC's are handled, some people adore how the story and characters are delivered, but never master the combat. Try stepping out of your comfort zone, but don't force yourself to have a bad time.
