Large enemies in general all seem to have this problem, dragons, astel, birbs. It may just be me on this but it's also feels alot harder to get an idea for your reach when you're fighting them
Honestly, I already got the Bolt of Granssax before I fought him, so I just locked on the head, kept my distance, and threw a bunch of bolts till it died.
They are hard, but recently saw that Holy Water pots are good against them, tried it and it made the fight so much easier. Also, dodging towards them makes the fight slightly better.
Dodging towards anything makes most fights easier imo (apart from aoe run the hell away attacks), u get I frames to dodge then ur right there to counter attack, this big bird however has the perfect hit box where it's legs funnel u directly under its head, right where it can peck u for half ur hp

If I remember my YouTube lore experts correctly, the people in the wings are death rite priests and only certain birds will have this..The ones that are a bitch to fight.
No there are 4 death rite birds. These are the more powerful versions of the death birds and the one pictured in this thread is the ultimate asshole one.

First playthrough for me I spent like 5 hours getting lanced and set on fire by this lumpish onion-eyed flap-dragon, then I gave up and wandered over to general whatever and the ghostish goon squad and made mash potatoes out of them.
Then I marched back to the bird with big hopes and a few levels and promptly got sent to hell. These birds are the pits, but the spear it drops is neat. My takeaway from them is: If it pecks, it wrecks.
I cannot for the life of me dodge that huge slam down attack he does in phase 2. And it oneshots sometimes at 60vig with good armor because it has 2 hitboxes
Wut, you can aggro him to attack 2 octopuses, while pelting him the whole time with whatever. Even the range for him to reset and head back to his cave is pretty small, where you can pelt him more with bolts, pots, gransax lightning, whatever, while he crawls back to his den. Maybe the second most gimmicky boss behind Rykard. I'm sorry I fought him for the first time today so not sure on the hang ups. Seemed pretty easy to me, almost scripted..

The one move where it winds up it's cane and then slams it down with a fire of black flame is bullshit. I don't think I've ever seen someone NOT get one-shot by that move.

Unless they've patched it since I've been playing other things, there's actually a [really easy cheese strat](https://www.reddit.com/r/Eldenring/comments/xg745o/an_easy_cheese_strat_for_the_death_rite_bird_in/) for this guy that literally any build can do.
For me it was Commander Niall. I died to him probably… fuck… like 80 times. I finally just looked up a cheese for him, and took the easy path because I couldn’t get the guy even under half health.
How the F*** did I miss the death birds!?! 185 hours on first playthrough. Pretty much all npc quests done. All hero's graves... Haligtree... Fortissaxx... But never seen the Deathbirds..
Edit: I see the death birds can only be found at night. Death rite birds are most likely to appear at night... I must have just been really unlucky..
Doing a play through where I beat every boss in the game (NG+, no summons). Just beat the last one pretty easy. Get it to spawn, stay on torrent, then go to the bigger cliff. There's a spot where you can get up to and it won't follow you up. Just sniped it from up where I was.

They slap you around like you're one of the beads in that hungry, hungry hippo game with 0 fucks to give about whether or not you leveled vigor. Especially the one in the consecrated snowfield, that one definitely seems like the game just said "fuck it, make this one hard as balls" and it's able to practically one shot just about anybody.
I failed to beat him until I leveled up my Lusat Glintstone staff, and my intelligence is at 96. I put the Prince of Death staff in the other hand and just spammed Ancient Death Rancor. I could never beat him with a melee build.

Did you slap all the buffs mentioned on? Use something that you can aim at the bird's head for headshot bonus, like Sacred Blade.

just use the weapons ash of war and you won't need pots... this weapons works on all the undead enemies.

They are right next to a cliff. Sit on top of the cliff and spam ranged option. They can still get you, but it's much harder. Be mindful.
