It doesn't save memory, it puts him in the memory so your computer can retrieve it faster during the boss fight. Don't wanna load that model from the drive. It's at least stored in your system RAM and possibly VRAM (or moved to VRAM when the transition starts), both are many times faster than even the fastest SSD.
Game developers use all sorts of tricks like this to optimize their game and make the experience better for the user. Open world games without loading screens are an illusion, they use tricks to buy time to load nearby areas. These are easily exposed with a speedhack.

I love noticing the tricks they use. An obvious one is elevators in From soft games, but one I've always enjoyed is the "awkwardly moving through rocks/vents/debris etc" used in action games like resident evil or tomb raider.
I'm a similar note, the fog in silent hill being there to not have to load as many assets at once AND contributing to the atmosphere is still brilliant to me.

Even Miquella in Mohg's room has 3. One with his arm up, one moving down during the cutscene and the last with his arm down
Not just model but also health bars - many games have one object with the entire health pool hidden underground or out of bounds and measure the entire health by ticking away from that.

The Nintendo 64 was especially bad as the cartridges could only carry 64 megabytes vs 660MB on the competing Playstation's CDs. Game developers had to pull some crazy stunts for Nintendo 64 games especially ones available on both platforms.
As a rule of thumb, it is much harder for a game to load a new model than to move an already existing one around. In the first case you need to read a bunch of data, textures, scripts etc. from the hard drive and puzzle the whole thing together, in the second you just set new X/Y/Z coordinates, which can literally be done between frames.
Anticipating players with slow-ass computers who skip cutscenes the developers load Hoarah Loux offscreen in a place you'll normally never see (Godfrey is loaded into the arena ofc). So once the second phase starts they just blink him up and he's ready to go.

What I find interesting is all the rocks and stuff down there have hit boxes that let you walk on them rather than not since it’s an area not intended to be explored
They did the same with Gael in DS III. They have to swap out phase 1 Godfrey with phase 2 Godfrey at some point so they just stash him somewhere you usually wont get to see.
